I'm looking to make a backup character in one of the campaigns I'm in, which currently sits at 11th level. I've been debating which class would work best to be the closest to a voodoo priestess, flavor over being the most badass (but still wanting to be effective and useful).
Two classes are obvious:
Shaman
Their hex fits nicely, but for Shaman deciding which spirit to use is a bit problematic. Speaker of the Past and Spirit Warden are potentially good ones to fit the theme.
Witch
Another obvious one, some archetypes seem to fit a bit. Dark Sister perhaps?
Other potential classes with some creativity:
Druid - Reincarnated Druid makes for some interesting backstory potential
Wizard - Spirit Binder or Spirit Whisperer
Sorcerer - Ghoul Bloodline, Tattooed Sorcerer
Cleric - Undead Lord?
Diving into really exotic ways of meeting the feel of the concept:
Bloodrager
Warpriest
Arcanist
Alchemist
Some of the occult classes would probably work, but I know absolutely nothing about them.
So, things I absolutely have to have:
Feats -
Brew Potion (through Alchemy or through magic)
Spells -
Divination (Augury, etc)
Necromancy (Though the campaign is not evil and undead are viewed as such, so probably not going to be using any undead there)
Relevant stats -
Main - Wisdom
High - Con, Dex
Medium - Int, Cha
Dump - Str
I'm sure there's better out there, but any thoughts on the process?

Well, Gravewalker Witch gets a literal voodoo doll as a Familiar... and the feat Poppet Familiar could really be fun here. Gravewalker stacks with Hex Channeler, too, if you want some Channels (or Control Undead).
So, after 3 levels of Gravewalker/Hex Channeler... you have Bronethrall, Coven, and Poppet Familiar.
Now we go into JuJu Oracle for 4 levels... pick up Undead Servitude and Spirit Vessels.
What a coinsidence, you qualify for Mystic Theurge... might as well start combining spell slots. You only need two levels before you can cast Animate Dead. And you know what that means...
Agent of Graves, awaits.
Oh, you're NOT going to be using Undead... drats.

Agree that a juju oracle is a solid match on flavour while still being effective. There are other ways of getting voodoo flavour tho': in general anyone who specialises in occult rituals, which is easiest if you're an int-based character due to the knowledge skill checks required (lore spirit shaman also works), and there's a medium archetype, the uda wendo - their ability to add Cha to Int skill checks helps with rituals too.

Just on the flavor side of things, sounds like you don't want to deal with undead too much, so I'm assuming the "classic voodoo" zombie motif is out. What aspect of voodoo are you looking to play up. Don't want to start a massive cultural debate, but are you wanting to play to some of the old stereotypes (I don't automatically assume that's a bad word), or were you wanting to play up/highlight a bit more of real-world voodoo. I'm not the most versed on that faith/practice/tradition, but you have a lot of breadth for ideas here. You could do voodoo dolls, shadow magics, vague spirits that evoke the Loa, construct creatures as opposed to zombies, you could even go a buffing and healing route. Which aspects are you wanting to prioritize?
If you wish wisdom to be your primary stat, then cleric or druid is a more obvious choice, but there are probably a few archetypes like those mentioned that may accommodate your flavor with decent mechanics. If you were playing up some of the ritual dancing and chanting aspects, a bard could be a novel way to go as well.

All of these are awesome. Right now we're debating if we go the way of a neutral with shades of dark/evil, and therefor "undead friendly" or if we stick to heroic. That will ultimately determine which route I take (only if we all end up changing characters). If it's just my character, then definitely taking one of the "good" options.

Uda Wendo (Wendo Caller per d20pfsrd) is certainly very interesting. The mechanics are fairly foreign to me for anything from the Occult handbook, so it'd take some getting used to.
I'd probably go Archmage spirt, as we don't (at least currently) have an arcane caster. Considering the focus on CHA, though... hard to say.

The point of the medium class is that you can go archmage one day, trickster the next, back to archmage (with some different spells if you like) the day after if you feel like it. It's kind of like having a bunch of characters balanced around the low end of the 6-level caster space, and at the start of each day you can choose any one of them.
An uda wendo medium who likes to call the archmage spirit may be cha based but is going to be very good with knowledge based skills. Both cha and spirit bonus will add to all of them while using that spirit.
