Is there any info out yet how those three will be treated? If they are their own races or if they will be handled like half elfs and half orcs?
(as they are halfbreeds themselves imho it would make most sense if they are treated the same...but then again they got the most differentation from their "base races" more so than half elves and half orcs).

Indications are that they'll probably get the Half-Elf/Half-Orc treatment in that they're Heritages. They seem like they'll be Heritages you can take as any Ancestry, however, which is cool.
Technically, this has only been mentioned as a likely possibility for Aasimar and Tieflings, but I'd imagine Dhampirs will be treated similarly.

Pathfinder established pretty early on that there are different "breeds" of Tiefling/Aasimar/Dhampir. I wonder whether/how that will be supported with heritages. Would there be separate heritages for Nosferatu-spawn and Moroi-spawn, etc.?
Half-elf have one ancestry feat that is called Elf Atavism that makes them get abilities and appearance of one elf heritage and have one special trait that only let you get that feat at the first level, so I can see Aasimar and Tiefling getting something similar.

I would like Dhampir to be a heritage that you can add to any ancestry. It would act similarly to half elf/orc where you could take any ancestry feat from your base ancestry or from the Dhampir which would have feats related to vampirism.
As far as Tiefling and Aasimar, it's a little complicated
They are half ancestries. You choose Aasimar or Tiefling first, then you choose a heritage which tells you what type of fiend or celestial you are related too. Each heritage gives you a specific ability tied to that parent outsider race as well as 1 stat getting +2 and another getting -2. Then you choose a second ancestry that is not an outsider race and a second heritage. You apply the stat bonuses and penalties of that ancestry. You don't get access to a first level ancestry feat however as a trade off. The next time you gain an ancestry feat you can choose from either ancestry. The Tiefling and Aasimar would both have feats related to just being a Tiefling of Aasimar as well as ones tied directly to the unique heritage you chose for them, preferably represented by a feat line.

Oh, I forgot about those feats. Yeah, that definitely seems like the way to do it.

I don't think we will ever see heritages which give ability boosts, especially not set ones, because they are part of the ancestry step and you can't boost the same stat twice during a single step. So if you're a dwarf and you get a constitution bonus, what would you do?
We do have one example of a 1st level only ancestry feat: darkvision for half orcs. You could stick the "what kind of tiefling are you" stuff in there. It is the same net effect as your suggestion, minus the stat bonuses. Actually, Kyrone already mentioned Elf Atavism, which would be pretty much exactly this.
Also, I think people might be more receptive of ancestry feats that change your body on these more mystical beings, so a feat to get angel wings at level 13 doesn't seem out of the question.

I wouldn't be surprised if they dropped the generic tieflings/Aasimar/dhampirs and instead went with just the subtypes. Those are a lot more interesting and we are no longer attaching all these ability scores to them.
Thus you mean "outsider" heritage and then via heritage feats you gain abilities according to he alignment/plane of the outsider?

I’d be surprised if they stuck with that limitation in PF2, given elves and dwarves can be vampires.

In the aasimar and tiefling books they said something about non-human aasimar/tiefling
I am not sure if there was a similar part in dhampiers but there was in the were-creature book
Well since it was all basically handled the same I would guess the 'Races' get the same treatment here - and heritage is imo a really good solution
(also I can imagine that some vampires really want to breed with elves *cough* )

It might be a bit premature to start throwing together homebrews like this.
For example, while it was common enough in PF1, I don't think we've seen any indication that language like "cast this spell as if you were one faster level higher" exists in PF2 yet. I may be wrong, but I don't remember it being there.
And given how the philosophy of PF2 seems to demand much tighter math and feats give you more things to do over plusses to your numbers, I would be rather surprised if it was still a thing.
Don't get me wrong, I like the ideas in your homebrew, I just think that it's be better to see the full product and know what types of rules are used and what types are not before we start generating stuff.
