So there are some things I've noticed that are missing gods or demi-gods that show interest in them.
Such as there is no god or goddess or anything else of horses. Nor do any of the daemon lords lend themselves to snake oil.
What other gaping holes in areas of interest have you noticed?

It has been noted that no deity seems to be particularly interested in cooking.
But generally speaking there are a lot of deities out there in PF. If you can't find exactly what you want you can almost certainly find some deity that's close enough. If you want an evil deity with an interest in fake cures then Mahathallah includes vanity in her portfolios, Furcas knows the secrets of herbalism, Haagenti alchemy, Vorasha incurable afflictions. One of those should work for you.

This is where 'cleric of an ideal/philosophy' comes in. Strength and Travel seem like good domains for idolizing horses.
(Also, any god with the Animal domain or a nature/animal entry in the portfolio would probably include horses in its umbrella.)
That depends on the setting; in Golarion, except for a few; you have to worship a deity to get divine power. There is no over all Cleric of an ideal/philosophy.
As far as horses you could also look at hose with a favored animal of horses; especially if they have the animal domain.

Jalaijatali's boons include transforming into water. He's CG but close enough.
I don't know how people managed as many gods as there are in Golarion or were in the Forgotten Realms in the days before information like this was online and searchable. Certainly I hadn't read anything about Jalaijatali until now.

A "fluffy bunny" nature deity, hearth mistress, farming. Now, I am not deeply steeped in the lore, so maybe I missed someone who covers these.
Andoletta isn't the best fit but probably closest as a universal goddess. https://pathfinderwiki.com/wiki/Andoletta
Folgrit is the Dwarven goddess of hearths but would be much less well known outside of a dwarven community or one with a strong Torag presence.

There's no general deity specifically focused on healing, unless I missed something somewhere.
Sarenrae is the closest, but even then it feels a bit tacked on.

Really makes you wonder if Erastil is a bluebeard, yeah.

Roads- Abadar, Erastil, and Desna kinda jockey for this one, but it's sort of unclear.
The Moon- Acavna's dead, and Tsukiyo has a pretty decided Tien flavor. Ashava could easily move in on this.
As noted, nobody seems big on cooking.
A deity for... well, for lack of a snappy English turn of phrase, la tristeza de la vida. Both Naderi and Zon-Kuthon kind of flirt with it, but... a deity who actually helps work through that sort of feeling... 'cause Naderi encompasses suicide, while ol' ZK is... ZK.
Messengers/Emissaries/Diplomacy/Peace- Maybe Shelyn? I could see appeals to Iomedae or Torag to oversee negotiations, but...
What's interesting to me is how much overlap we have in play- we have at least five war deities in the core pantheon or core-adjacent stuff like the Four Horsemen.
The Eldest have helped with a few areas that were in extremely weak shape, though.

I don't know if anywhere in Golarion has the concepte of household deities, but if so that would also be an option.
They really should have kept the "of a philosophy" thing, especially since it's a core mechanic and since there are numerous non-deific sources of "divine" power already identified. You could then flavor any kind of "deity" using this system, including, e.g., household gods, small gods, and Rhin's gods from Torment.

So, I had a player who looked for a god that bandits worship. The best he could come up with is Besmara. I think there may be a demon prince, but a God of Banditry seems to be missing.
The first question is why they're bandits I guess. Because they believe in the right for the strong to take from the weak? Gorum, Bohga or, yes, Besmara perhaps. Thievery is their profession? Thamir Gixx, Gyronna or Lao Shu Po. For revenge? There's a lot of those, Calistria being the most notable. Just because they want to be rich? Again quite a few, Norgorber the most famous this time
If you're looking for a god of bandits only then yeah, you may need to make something up.

Indeed, a standing rule of "don't like any of the deity options? Pitch me a new one, and we can work together to finalize one" or alternatively "is there a deity whose portfolio you want to expand" can work great if you're playing with a consistent group of people.
In our Golarion, this is how we ended up with a dozen new Dwarf deities and split "Mathematics" between Shelyn, Abadar, and Ng.

I did some data crunching sometime back to see if my favourite aspects were biased anywhere on the alignment scale, and the biggest thing I noticed is that there are no non-evil deities that provide the Insect Subdomain (it is provided by 5 CE deities and Achacek Akacheck He Who Walks In Blood). There are also apparently no true neutral deities that provide any of Darkness, Void, or Sun.

Aesocar, an Azlanti deity of healing, is still alive and can grant spells to followers. Though he is mostly forgotten on contemporary Golarion.

There isn’t an emotion domain, but there are a lot of subdomains that deal with emotion; hatred and fear are two examples. I bet there are a lot of deities that could deal with joy or sorrow.
Also, I was kind of disappointed to see that there wasn’t a gravity subdomain for void. It deals with space as a theme and there is one demigod that could specifically use it; Uaransaph, daemon harbinger of falling.

Pre-Asmodeus Cheliax did - their stats are in Pathfinder Adventure Path #27: What Lies In Dust. Of course, you wouldn't be getting cleric powers off one of them.
(I love the Roman/Italian flavor of Old Cheliax. ^_^)

...and yet we lack a bomber deity. You'd think that there'd be a god of blowing sh!t up somewhere as his or her shtick for goblin alchemists or Verces space pirates or something.
Almost two decades ago, we goblins founded a new mystery cult to Mik'Ullbey, divine avatar of Hastrikhal. Our main temple is just outside of Magnimar, so stop by for a- {pauses, listens to arcane whispers} No, wait, we just had a medium-ish explosion (again) in the temple.
{pauses, listens} Ah, good. The damage is not too bad. As long as the foundations are still strong, we can rebuild. It will become a haven for all peoples and aliens of the uni- {pauses} Oof. Now those foundations are gone. Sorry.

Jaidi (from Pathfinder # 123) might be what ye seeks. Of course, she's fairly obscure (ingame and metawise) because she was introduced in the Ruins of Azlant Adventure Path. ;)
