Because if you cast Lesser Restoration after the first night, the fatigue goes away, so you are not exhausted after the second night.
With my alternative wording, the second night would make you exhausted even if you weren't already fatigued.
I can better see what your going for after a nights sleep and some sweet, sweet pain meds. I still think that people transitioning from the 2 FAQ are going to have the same thing pop into their head: My first thought was "Isn't that the same as before?". As such, I think it'd be best to spell out that it's full exhaustion even without fatigue. It's not like FAQ's need to worry about space.
Still, "Lesser Restoration every day plus an hour-long power nap" might bother people less than "Lesser Restoration every day and never sleeps again".
Maybe? I'm having trouble understanding the issue with either but you might be right.

Yeah, it doesn't really bother me either way.
Humans need water, but a level 0 spell allows them to survive in an environment with no water.
Humans need air, but Water Breathing or Air Bubble will supply you with that.
Humans need food, but Create Food And Water or Ring of Sustenance makes this go away.
Humans need clothing and/or shelter. Magic can provide.
I don't see that it matters much if magic can deal with the need for sleep too.
