I'm starting up a new game next week, and I have a newer player who has decided to play an aasimar hunter. One of her feats allows her tiger animal companion to gain the celestial template.
In reading the celestial template, the companion should gain spell resistance equal to it's CR + 5.
How does one measure CR for an animal companion?

You don't. It doesn't have a separate CR. It counts as part of the characters challenge rating, same as all other class features.

So it'd be based off of the character level, then? Would that put the SR at 6?
No, it'd be +5. Entities who don't have racial hd and must have class levels are CR=Character Level -1 for Player Classes, and CR=CL -2 for NPC Classes.
So that level 1 Aasimar would be the highest fraction CR, which when +5, is CR +5. But each level it'll go up one, so keep that in mind.
Though I'm in the camp that says animal companions do in fact have a cr, since an Awakened Animal Companion keeps the power it had as an ac, while adding to it with the awakened spell buffs. What exactly that CR is is up to the gm, because as far as I know, no information exists on this.

The CR = Character level -1 applies to NPCs with Player Class levels.
I recall that the designers have pointed out that PCs normally have a lot more equipment than NPCs with PC levels so that their CR is approximately equal to their Character level. (leaving out the War Troll in the corner pointing out that there is considerable difference in power levels of various Player Classes).

Divine Hunter Archetype for Hunter from the ACG
Otherworldly Companion (Su): At 3rd level, a hunter's companion takes on otherworldly features. If the divine hunter is good (or worships a good deity), the animal companion gains the celestial template. If the hunter is evil (or worships an evil deity), the animal companion gains the fiendish template. If the hunter is neutral and worships a neutral deity, she must choose either the celestial or fiendish template; once this choice is made, it cannot be changed. The companion's CR is considered to be equal to its hit dice for the purpose of the celestial or fiendish template. This ability replaces hunter tactics.

@ Heather 540: The feat is called Celestial Servant, and can be found in the Aasimar section of the Advanced Race Guide.
@ Thewms: Nice catch with the Divine Hunter archetype. I was kind of figuring it would either be HD + 5 or level +5. Nice to see some sort of clarification in the rules. :)
I appreciate the input from everybody. Thank you all for help with this subject. It's nice to get several opinions when the rules seem a bit murky in some situations.
