I was thinking about being some kind of Evoker mage (or something that does Elemental damage) but was trying to see how I can beat Energy Resistance/Immunity. Even the lowly Dretch Demon has Fire/Cold/Acid Resistance 10 and flat out immunity to Lightning.
Is there a class ability, feat, etc., that can bypass Energy Immunities/Resistance? I am trying to get this going right from level 1 if possible.
I mean I know mages can do better things that just damage their opponents, but is there a way to at least make this less difficult?

I think I've seen a Pyrokineticist with the ability to burn a fire creature. Sounds dumb and I'm pretty sure it requires some sort of sacrifice. 3rd edition had 'Searing spell' but this ain't 3rd.
Demons are tricky and really what you want is a good ol' smiting divine class thing to hit them.
If you know you're going to exclusively be fighting these things and you still bring your fire/thunder/frost trinity then expect to be annoyed. That said, force and sonic effects are pretty nifty...

Kineticists can use draining infusion to hit creatures of their subtype, and pyros can also get burning infusion to reduce fire resistance (but not immunity.)
If the immunity/resistance is the result of a spell you could try dispel magic or similar first.
The elemental spell metamagic feat or a elemental metamagic rod can also change the energy type of your spell.

The WINTER WITCH PRESTIGE CLASS (not to be confused with the WINTER WITCH ARCHETYPE) ignores half cold resistance at 3rd level (character level 8) and at 8th level (character level 13) ignores 3/4 cold resistance or deals half damage to creatures with cold immunity.
Really though your best bet is to bring a lot of different energy types.
If you do come across something that's resistant to everything: EMPOWER SPELL is your friend.
I don't know of anything that's immune to every energy type, but if it's there then I guess you'll just have to let the beat-sticks shine for once.

For cold damage, you can snag a truefrost elixir. The spell planeslayer's call can reduce energy resistance but not immunity for outsiders - however, it's primarily a divine spell, though occultists access it too. A 20th level elementalist oracle can bypass energy resistance completely. Esoteric Advantage can very slightly reduce a creature's energy resistance for you (as well as damage reduction or spell resistance). A miserable weapon can halve energy resistance, but needs to be built towards a particular creature type/subtype.
Realistically, it's usually better to either make your Knowledge checks and go for what they aren't immune or resistant to, or try to focus on energy types that are rarely resisted against, such as force.
