So monks are MAD, like way too MAD. Has anyone looked into using Finesse/Slashing Grace to remove STR from the equation? Or is the hit from going to light weapons too much?
I don't think there is any reasonable way to argue that Slashing Grace applies to unarmed strike so you are likely stuck with using a light monk weapon...unless there is some way I don't know about.

Well, yes.
You need Weapon Procificiency (Whip), Weapon Finesse, and Slashing Grace. This will allow you to use a Scorpion Whip to deal full damage. If you want to use Flurry of Blows with it, you will need to multiclass cleric of Calistra 1 for both the proficiency and the ability to take Crusader's Flurry.
It's quite a lot of feats, but it will work.
I'm not sure if weapon versatility would allow you to apply slashing grace to a rapier...

Unarmed strikes are light weapons.
Edit: The problem is that weapon finesse only works with light weapons (+ some special weapons) and slashing grace only works for one-handed weapons. So without being a swashbuckler or using one of the special weapons you can't use weapon finesse with slashing grace.

Most of the weapons that qualify for Slashing Grace don't qualify for Piranha Strike.

Agile: This enhancement can only be placed on a melee weapon which is usable with the Weapon Finesse feat. there you go.
-Question: Would the Kata Archetype work with the swashbuckler level? does it mix with sohei? because if this work, would be a bombeh.

Meh, make a strength wisdom based monk.
Personally I like a Dwarf Monk with
Str 16
Dex 12
Con 14 (16 w Racial)
Int 10
Wis 14 (16 w Racial)
Cha 8 (6 wRacial)
I provides a well rounded offense and defense. You could go human as well and get a boost to strength instead if you wanted more offense.
If you're not focused on being particularly acrobatic and such, the strength based monk can work better (IMO) than a dex based one. His AC wont be as good, but he has a much easier time hitting and damaging than a dex based monk and isn't realiant on gear to do so. He also doesn't have to spend a feat to get weapon finesse which allows him to pickup other things.
I will say however, that if you want to be dex based, that slashing grace + temple sword does sound like a pretty workable way to do it.

Unarmed strikes are a melee weapon which is usable with the Weapon Finesse feat.
Unarmed strikes count as light weapons (for purposes of two-weapon attack penalties and so on).
Benefit: With a light weapon, elven curve blade, rapier, whip, or spiked chain made for a creature of your size category, you may use your Dexterity modifier instead of your Strength modifier on attack rolls.
There certainly is an Agile Amulet of Mighty Fists.

You forgot that it only works for martial artists (Calistra is a CN Goddess). Of course Lissala (LE) also has whip as a favored weapon, is LE and theologically accords nicely with monks. As far as I know it would take a GM custom deity for a LG monk (cleric 1) access to a flurrying whip. Note that as a cleric of Lissala or Calistra you get weapon proficiency (whip) for free at level 1.
Also, although I do not own the adventure to be sure, last spring it seems that a deity (Selket?) who has the scorpion whip (not whip) as a favored weapon was published. This implies that only the regular whip, and not the scorpion whip, would qualify as the favored weapon of Lissala or Calistra so the whip mastery feat is almost mandatory.
