Hm. To be fair, running to a community and have them build the anti-gun character, kinda defeats the GM's challenge that you do it. But in general principles, I figure concealment/miss chances are your friend. The water idea is also good, likewise 'heat metal' can result in some particularly interesting results if you mess with gun barrels and stuff.

Think of it like an adventure. When your characters are tasked with something, do they just go off into the wilderness and try to solve it or do they seek advice from the locals in the nearby community first?
The community can give advice and tips, but in the end you are the one who has to do it. :)
