Though of course the national antheme changes every few months and the componists loses his head... (by the way, the Marsseileise was a marching song for renegard miltary joining the revolution).

I'm going to have to echo the dubstep choice as your first option. Once everyone's done giggling at the joke, then...
...it seems like you'd want something slow with deep, foreboding tones to it. Cheliax isn't death metal, it's a slower, more methodical, sinister thing. Several people have already made great suggestions along those lines, so I'll refrain from specific song listing.

Trumpets and brass are a bit too...angel-y for my evil tastes :-)
Crazy imperial death march music and heavy metal might work for Hellknights and those uncouth demons. But we're talking byzantine complexity high society evil here.

I'm pretty sure Porky's theme would be perfect for Cheliax, given how it is both sinister and grand. It's certainly at least the perfect theme for walking around in a giant spider-mech-o'-doom.

When my players sailed into Coretyn I played Elizabeth's War Theme from Civilization. To me it's always screamed of Cheliax; a massive naval power with a long tradition of nationalism, perhaps a little too confident in its own power, but which nevertheless demands respect.
I also plan to play it when we run afoul of Cheliax in our ongoing Skull & Shackles game.
EDIT: I also dug up the text of "Of Life In Cheliax," a protest song I had my Chelaxian player character get subjected to by a halfling bard.
Its citizens would have you know,
It crowns the Inner Sea,

Well, while we're on the topic of theme music for the various Golarion countries, I must say that while I don't know what specific song it should be, I know that the theme song for The Worldwound should be something by Nickelback. Because that's the most unholy thing I can think of.
Also, for Andoran, there is no question that its theme song should be this, or at least an adaptation thereof. Because, really, is there anything more fitting?

Well, maybe not for Cheliax, but for Nidal, I might suggest this , as I find R'hllor from The Song of Ice&Fire very similar to Zon-Kuthon.
And you must not forget opera, classical music, as it dates to pre-thrune era. After Thrune family is in charge in Cheliax, there tends to be a love of devil, and diabolism in the operas. As I'm not similar with the opera & classical music, I cannot help you there.
PS: Just for fun, wanted to post Sepultura + Pavarotti version of Roots Bloody Roots , as it is dark as the soul of Cheliax, and it includes the one of the best tenors in the world.

When I was running 'Council of Thieves', I used a lot of operatic music.
Specific tracks were 'Una Furtiva Lagrima', 'Toreador Song', and "Au fond du temple saint". There's lots of Venice in Westcrown, so the Italian opera flavor worked really well, especially with Pavorotti singing. The soundtrack for "Kingdom of Heaven" also lent to the same feel.
If I were to run it again, I would make heavy use the soundtracks from the "Assassin's Creed 2" trilogy. They have that perfect operatic feel couple with underlying tension.
