I signed up for two of the open games, which I'm pretty sure are Pathfinder Society games:
Friday, June 10
12:00 PM – 05:00 PM The Midnight Mauler
Saturday, June 11
08:00 AM – 01:00 PM Shades of Ice, Part 1: Written in Blood
I'm not at all familiar with Pathfinder Society games (other than knowing basically what they are) and don't play in them at home, so I'm not sure how to go about creating a character.
I assume I should download the Pathfinder Society character creation rules here on the site. Beyond that, how does one determine what level to go with? These games both have fairly wide level ranges (levels 1 - 4 for instance)?

I assume that is more for continuing PFS characters though. What about for situations like this where players are only signed up for PaizoCon and have no intention on continuing with PFS play after PaizoCon. We still have to roll up first level characters?
Also, how does this work when a game is listed as being for levels 1 - 7? That's a wide range! I can't believe a 1st level character is supposed to adventure along with a 7th level character!
For that matter, how do we get more info about the specific game and who is running it in case we have questions?
Heck, the Saturday game I'm singed up for (Shades of Ice, Part 1: Written in Blood) does not even appear to list a level range ...

you have 2 choices.
Make your own first level character using the Character Gen rules in the PFS Guide, or play a Pregen at the level of the table.
For example your example is 1-7, that has 3 sub-tiers in it, 1-2, 3-4, 6-7, depending on the average level of PC in the game will determine which sub-tier you are playing. If you are playing 1-2 you would play a level 1 Pregen, 3-4 a level 4 pregen, level 6-7 a level 7 Pregen. There are only Pregens for levels 1,4 & 7.
You can not make your own character starting at higher then level 1.
There are some more complicated rule on figuring out Average party level, but you don't really need to worry about that.

Short answer - yes. All characters made by players must be played starting at level 1. There are no exceptions (though there are ways around should you want to play Pathfinder Modules).
Long answer - sort of. You can bring your own character or you can play one of the "pre-generated" characters (representing fighter, rogue, wizard, cleric, alchemist, cavalier, and witch). These characters can be played at levels 1, 4, and 7. Be aware though, as long conversation over at the PFS boards, playing a pregen gets on the nerves of a lot of players as you must play them as-is (no modifications), and they are very much under-optimized.

It is possible and I've seen it happen. Games are broken up into sub-tiers. For a 1-7 game you could play at 1-2, 3-4, or 6-7 depending on the APL of the party. An APL 4 party consisting of 1, 1, 1, 7, 7, 7 will play together at an adventure appropriate for level 3-4 characters. This doesn't happen very often though. Usually it's about a max of a 3 level disparity (level 1's playing with 4's is uncommon but happens).

Most of the time the specific GM isn't aware of the players in his/her game. I for example am running three PFS games at PaizoCon and I couldn't even begin to tell you who will be there. As for the specifics on the game, the blurb presented when you signed up is the amount of information any of us really get before playing a PFS adventure.

Thanks everyone - this helps.
I downloaded those pre gen character PDFs and I'll have the print outs with me just in case, since I'll most likely use one of them.
Hopefully people will not be quite as negative toward using the pre gens since I'm pretty sure there will be planty of people playing in these games that don't normally play PFS.
