Tengu is the best choice. It is largely unique to Pathfinder as a race thus more people are likely to buy it. No one's covered them with a 3rd party book and the skies the limit in what kind of options you can add to such a companion.
Subjects like Gnolls, Centaurs and Medusi (Medusa's?) offer little to players other than strategies against such monsters. It's not impossible to fill a Medusa book with a Stone bloodline for sorc's, feats that offer protection against petrification or a half Medusa race, it just takes that much more work.
Tengu solves all those problems. It's a race right out the gate, feats that enhance their abilities are enticing for players, even a sword based prestige class could be worked in.
For something not on the list have you considered a Pathfinder Companion for, companions? Familiars, animal companions, even cohorts could make for an interesting book IMHO.

What if the assumption that half-orcs are covered in Orcs of Golarion is wrong? After all, where were the half-elves in Elves of Golarion? So maybe the next book will cover the half-human, half-whatever races and they can call it Bastards of Golarion or Outcasts of Golarion. Or maybe there is a book in the works similar to Races of Destiny that will cover humans, half-elves, and half-orcs.
Edit:
Hexcalibur, if there is going to be a Tengu PC race, then I am sure they will save it for the Tian Xia supplement.

For something not on the list have you considered a Pathfinder Companion for, companions? Familiars, animal companions, even cohorts could make for an interesting book IMHO.
This is one I'd like to see, also.
I thought that we might get cultural books instead.

Jimmy J. & E. Mona are not going to neglect the Nations / Cultures of Golarion. I'm waiting for my Mana Wastes, Where Magic Has No Meaning companion. But until then we get 5-6 Companions every year. I figure at least two of them are going to based on something other than a nation / culture. (Example: Adventurer's Armory.) So, GeraintElberion, what races would you like to see?

It doesn't really answer the exact question, but the overall question...
What I'd like to see is (fill in class name of choice) of Golarion. Not so much an excuse to swamp us in new feats and prestigue classes, but something that could be used to show of alternate class features. Much of the non game mechanic text could be how the different classes are viewed in various nations of Golarion, as well as how different races view the various classes (wanna read about how a "typical" dwarven sorcerer goes about adventuring?).

If we do an aasimar or tiefling companion... I'd rather do 2 companions than 1. We don't really use the word "planetouched" in Pathfinder, in any event.
And tieflings and aasimar deserve their own books anyway; I'd probably do an aasimar book first since we've already done some work with tieflings in PF #25.

Humanoids of Golarion might be awesome, detailing the various other starter races like Tengu, Hobgoblins, etc (basically any that can start at lvl 1 unlike the more powerful Svirfneblins and Drow races).

Most of the monsters described are things I wouldn't really like to see companions for (at least, not regularly). I see companions as player focused books, and creatures like hill giants, the medusa, and such aren't really great for player use. I am sure one could create a medusa bloodline and spells, but I'm not exactly sure how one could fill a book with common knowledge fluff and player crunch.
The races that I would like to see would be the human ethnicities, assimar, tiefling, and tengu. But I think I would be happy with most races that I could see myself playing.

I agree with the point about monsters. Maybe a separate line of books altogether? One that rolled three monsters into one book? Gnolls, Centaurs and Medusi in one book would seem kind of weird I admit, but goblins, hobgoblins and bugbears in a book would be a sure seller.
And thank you Blazej for seconding Tengu. XP to Enevhar Aldarion for suggestion it only be viable in a Tian Xia supplement. It's all lies. (I jest, but seriously ;P )

I think that the Monsters Revisited books in the Chronicles line have been doing most of that job well. Classic Monsters Revisited even includes goblins, hobgoblins, and bugbears among the small number of monsters it details.
The only thing that I would say that line lacks compared to the companions is a significant number of mechanical options (feats, magic items, spells, etc.) for each of the monsters (While there are a few feats, most of the new monster options are variant abilities). Which is agree with as feats and such are less suited for this Game Master focused line.
Although, now I can sort of see a Monstrous Player book where there might be new feats, spells, and bloodlines focused on emulating specific monsters.

Actually, a companion on Centaurs would be the perfect place to stat out a savage-species like progression for centaurs. One of my players is a centaur in my game (we're 12th level now) and he's a lot of fun. He used to be overpowered in 3.5, but with the "normal" sized weapons for the pathfinder version he really isn't any better than an orc.
I know a general book like savage species can't get on the schedule for a long time, but giving that kind of treatment to a specific race is a lot simpler to balance.

Mostly I think that there really doesn't need to be many more (races) of Golarion books, the ones that have already been announced or release pretty much cover the creatures that deserve this kind of treatment.
That said, of those discussed here, I do find the idea of a centaurs book kind of intriguing...I'm just not sure that they have a strong enough presence in the world to make it worthwhile.
Also, once an Oriental Adventures style book (or a similar cultural expansion) finally gets released, a companion on whatever new PC races get introduced might be interesting...but would it be profitable?
