I was wondering how do I know how many monsters is a balanced encounter for a level 1 party with four players?

While they may not really cover that to any great detail in either the C&C player's handbook or C&C monster and treasures book, Troll Lord Games, the publisher of C&C is coming out with an Castle Keeper's Guide soon- that may have the info that you're looking for.
