Does anyone know of a good list of average AC by level or something like shoelessknight's AC 10% miss chart but for higher percentages(50-60%)?

Can anyone explain how a level 7 Roc companion could grab an opponent and fly away. What feats would be required and how would it operate? From my understanding it wouldn't be a fluid motion. And up to large sized creatures.

And I'm looking for ways to spruce things up and protect it. I have a rung of sustenance and will also need things to do at night. We have a kitchen/eating area, a living quarters and one empty room. The town is relatively small but seems to be growing. The group is a halfelf ranger, human sorcerer, halfling rogue, halforc barbarian and human wizard. We have 3 familiars/companions.

How about a grave digger class?
