This actually looks like a pretty good group. Motteditor could literally drop in just about anything without much issue. :)

Given the group make-up I'll probably switch to the Rogue

Fair enough. And I will get the mentor boon for this game.
Trying to figure out what to play; I have a swashbuckler idea that I like but also kind of want to see if I can get a good witch concept (since that feels like a good class for the party, but also a fun choice for the adventure). I'll try to decide soon.

Having a bit more play time under me where 1 PC at 4th level has significantly impacted the challenge for a table of 1-2s, I will for sure switch to the Rogue.

This is my 2nd level rogue.
I'll be looking into the APG when it arrives this week, as Grisaia hasn't been played yet and is at 2nd due to pregen credit. Her 1E build was glaive and armor with a focus on buff spells. Any advice on translating to 2E is welcome.
Not too many options, as a cleric, so I guess that it depends on how you wanted to do it.
At the most basic level, you'd probably go with the Warpriest Doctrine, for the armor, and martial weapons at second level. If you're a cleric of Shelyn, then you can take the Glaive right away.
Beyond that, it depends on what else you want to do.

I don’t actually calculate until I actually start the game
That being said, it is my opinion that all characters should spend 2 fame for a mentor boon, and 4 fame for a wayfinder, at the minimum. Both show understanding of the campaign, and Cooperation.
