Garmack I'll give you a reply in discussion.
The key word is recognizable. Animals are train to attack , which can be any unknown targets, any unrecognized targets, any who enter a certain area and so on. The attack trick allows an owner to direct the animal to attack a specific target of the owners choosing, not attack anything that goes into its area. Guard defends an area and so on. This is why in real life a handler stays with the dog, to guide it. Assuming you told your beastie to stay, it will wait for you only attacking something if it is attacked. If you told it to defend odak, then it would follow him, and attack anyone who attacked/is threatening him and anyone who attacks it.
This is why you still need to use the handle animal skill to direct your animal, though you get big bonuses as it is an animal companion. It still acts like a creature of its type in general, unless you order it. Granted it is a superior animal, and highly intelligent for its type, but still.
It could be assumed that you told it to stay or guard, and it will obey that unless circumstance intervenes, or you give a new order.
This is subject to mercurions decision of course, I'm just putting my two cents in. There is usually a lot of hand waving when it comes to animal companions in general, I have noticed.
I have the same interpretation as chill. First, you should absolutely be able to add the full number of tricks for Urrogajutar under the assumption Garmack trained him prior to this mission (I noticed you only list attack so far); second, the character needs to be there to handle the animal. He only has an intelligence of 2 after all, so he is an extension of Garmack but without the judgment to independently decide what to do on his own as would a PC.

The Giant steps aside to the right (DOWN 1, LEFT 1) to allow his allies to move forward, but fully intends to be adjacent to at least one ally so that he may use his Saving Shield ability to protect them AC-wise.

The party charged forward out of the glare of the alchemical light. In front of them, the gully straightened out but then seemed to open up beyond that, their view partially blocked by a steep rise, beyond which there appeared to the glow of a low fire. Above, they heard the cranking of a crossbow winch.
Down the gully in front of them – it was difficult to say how far due to the echoes in the canyon-like space—there was more shouting of orders in Common.
Garmack saw a path just above him that he’d be able to reach the next round, with Tigerwolf scrambling up the hill a little ways behind him.

Though if none would be in close enough range, would move in as close as possible with only a single move and throw at least one of the shurikens if any were in range at that point. And movement is 40ft if need to know how far would be able to move.

Following Dergohs’s lead (really? lol) the party sprinting up the hill and over the sharp incline to – three massive elk, standing 7 feet tall at the shoulders with enormous antlers, headed their way. The human riders wore heavy black riding pants and tight green coats emblazoned with a symbol of a sun’s rays behind a pair of antlers. Seeing the wall of huge orcs coming over the rise, the leader rider reined up briefly, while the two others on the wings discharged heavy crossbow bolts at the lead pair, Greez and Dergosh.
Behind them, the group could see a couple of additional humans pulling on their last bits of armor as they scrambled towards their own mounts.

Like the bolt earlier, these exploded in a blaze of flaming light, causing additional pain where they struck. From above, another bolt flew at Odak, and while his armor easily withstood the attack, the burning substance stuck to his armor, turning him into a mobile lamppost. The whole area was flooded with light.
Garmack pulled himself up to a winding path. There, just up the path, was a human now beginning to recrank the crossbow he had just fired at the party below. Thanks to the commotion, he was paying absolutely no attention to the ranger.
Tigerwolf will reach the spot Gramack is in next round (no need to for additional climb checks). Initiative order is: Majuba, Tigerwolf, some of the humans,Odak, Greez & Karol, Garmack, Dergosh, other humans

Will be moving to the more southern of the three on the elk things. Since they are in range. Then attempt to do almost like a jump kick at the rider itself. Hoping with perhaps enough force to with luck knock them right off that mount. All the while growling very loudly since that bolt which struck hurt.

Finally able to act now I'm back home, I hate mandatory family engagements, nevermind ones timed so they interrupt the good parts

Majuba’s spell took effect, though it appeared the human rider was desperately fighting the effects. Odak took advantage, however, to lay into the rider with his sword. Karol came up and laid into the rider’s mount, slashing it deeply across its massive chest, which infuriated the giant elk. Fortunately Karol was able to avoid the slashing antlers and hooves.
The rider to the north spurred his mount forward to attack Majuba, sticking the witch doctor with his spear while the antlers of the elk caught him in the chest. [14 damage]
The other rider had more difficulty controlling his elk and Greez went unscathed, while the two other humans ran to their elk and mounted up.
Above Garmack put an arrow into the human’s back as he desperately tried to reload his crossbow. Tigerwolf clambered up behind him, weapon drawn.

Odak’s stomp topples Greez, but the prehistoric elk ignore the seismic wave from the giant. Karol missed the beast in front of him, while Dergosh gives the nearby riders another taste of energy courtesy of his one-earred god.
The middle rider suddenly broke the hold Majuba’s spell had on him, but as he turned his mount to veer away, Karol sliced one of the big animal’s hind legs, sending it crashing to the ground.Oh, that was big. The rider tried to tumble clear as the elk crashed to the ground.
