If I'm a Fighter with Leadership and want my horse as a Cohort... do I just use animal companion rules? If so, druid level = my level? My level -3? ??
Some of the wording in certain places (IE: dragonne) possibly suggest this, but I'm not aware of any definitive rule on the matter.
No you don't use the companion rules. You'd have to work with the DM to get something started in that particular case. I want to say typically a companion has at least an average intelligence but am away from books at the moment so not 100% sure. Basically the horse would be an inferior companion as I don't think it could have levels of anything added to it (again a cohort has pc levels typically or at least the capability to have them – animals just normally advance with animal HD). The cohort has the capacity to leave and there are specific penalties if you let them die, animal companions are different in that respect as well.
Rules wise I would suggest just taking a level of a class that gives you the horse as a companion. I know that isn't what you probably want to hear but it is the simplest "answer" to your question. If you are dead set on a horse like creature there is the unicorn or pegasus I believe that would fit the bill.

Check out page 316 of the bestiary, its got some rules for Monster Cohorts (which can be used with the leadership feat with DM's approval). Griffon Cohort Mount would be awesome!

The Leadership feat (see Pathfinder RPG Core Rulebook page 129) allows a character to gain a loyal cohort. With the GM’s approval, this cohort can be a similarly aligned monster rather than a humanoid with the appropriate number of class levels. Monsters on the following
list all work well as cohorts (be they bodyguards, mounts, assassins, etc.)—their effective cohort “level”A monster cohort gains experience points as if it were a character of its cohort level, and when it gains enough XP to advance a level, it should generally gain a key class level (fighter is often the best choice for most cohorts). You can use the monsters on the following table as guidelines when determining effective cohort levels for monsters
not on this list.

In LG in the Bandit Kingdoms my dwarven Barb/Ftr gained access to purchase an awakened, talking mount in a BK mod. After I bought the animal as a mount I asked the BK triad if I also took the Leadership feat if they would allow him to become my cohort. They allowed it but still limited me with extra restrictions. I could not choose his alignment (TN) and I was limited to ONLY those slots allowed for other mounts and companions. Still Moregrimm, my mount, turned into an exceptionally strong melee centric cohort. When saddled the two together were very formidable even though I possessed none of the riding feats that say a paladin would have.
