So, I'm trying to build a PC that's similar to Elsa Bloodstone from Marvel Rivals (aka a female human who hunts monsters that stalk the night with rifles and handguns enchanted to kill foes like fiends, undead, etc etc).
My question is, what kind of class build or mixature of class and archetypes should I use? Any suggestions would be helpful.

I'm not familiar with the character, Elsa Bloodstone, from Marvel Rivals, but based on your description, there are quite a few ways you could go about such a concept.
Off the cuff I myself would probably go with Gunslinger or Ranger, or perhaps one with a Multiclass archetype in the other.

If you are looking for a tech level comparable to the Marvel universe, you probably want to start with Starfinder and tone down the sci-fi. So stick to Analog weapons and Pathfinder weapons rather than the high tech Tech weapons. (Though even the need to tone things down is debatable considering Guardians of the Galaxy.)
But with that, then Operative with Thaumaturge archetype would be a good pick too.

With the Caveat that this won't be 1:1, Elsa Bloodstone is very easy to achieve with just a Sniper Gunslinger and then taking Ranger Dedication for Hunt Prey, then Basic Hunter's Trick for Monster Hunter and Advanced Hunter's Trick for Monster Warden. Use your 1st level Gunslinger feat for Munitions Crafter, since Elsa also uses special ammo quite a few times.
For skills you want high Nature, Survival and Stealth.

The only real way to say you "imbued your weapons with magic to kill specific enemies" on a consistent basis that wont leave your character broke (with money) and unable to contribute against a new kind of enemy is the thaumaturge.
I won't make assumptions about the thematics of what kind of firearms will be allowed in your campaign. But this sounds like a thaumaturge using ranged weapons.

Slayer from the Risks and Rewards Playtest with a gun as your bloodseeking "blade" signature tool could work. RAW, the bloodseeking blade can be any type of weapon ("Your signature tool is a level 0 common simple or martial weapon of your choice. You can designate a different simple or martial weapon as your signature tool when you Reinforce your Arsenal, transferring your special adjustments to it."), not just an edged melee weapon; you can even re-flavor the Crossbow Slayer feat into a "Gun Slayer" feat that works with PF2e firearms and/or use another feat (through Natural Ambition if human) on Peculiar Weaponry for an advanced firearm.
