Paizo has not given any indication that there will be any more 'remastered' books beyond Player Core 1 & 2, GM Core, and Monster Core.
From what they've said, it appears that they're just going to go back to their regular publishing schedule for new material, and will not be reworking any other material that was published previously.

There have been no official statements or blogs on the topic of how they'll be handling the rest of the original/legacy PF2 Core and other Hardcover "rulebooks" to date.
As for what you can expect, I couldn't really say, I used to be of the mind that the project, since it already completely absorbed the whole errata team they built just before the OGL crisis and had to grow to include more staff, after PC2 would grow into a full legacy Remaster project to recreate wholly untainted versions of everything that's actually important to the system and new versions of all of the classes (minus Kinetecist as they nominally already tweaked much of RoE to align with MOST of the Remaster changes). The idea of carving things up into PC-X and GM-X seems to be a pretty okay one and they can continue on that path by only covering the already published OGL content in a repackaged and refined form for at LEAST another two books in the PC-X and GMC-X line ... but I'm not so sure that's the case anymore and I believe/understand that there is more than a little bit of irritation and frustration that planned books and new expansions on the game had to be pushed back so much and reorganized/recreated/reformatted to make sense and ensure the Remaster project books were made a priority so... maybe they won't continue the Remaster project books right away and will pivot back to how they were doing things before the whole HASBRO fiasco by focusing on more setting styled books, which makes a ton of sense given that those are always dropped with options and setting info to support a concurrent AP product.
I hope that the Remaster project/errata team they built keeps on steaming ahead and once PC2 and the MC books are done they can hammer away at further sequels to them that bring as much of the Legacy content over to the Remaster "version/printing" but their plans on how to approach it haven't been announced so it's anyone's guess, at least so long as nobody is trying to talk inside baseball.

I expect that Errata will cover most of the update to ORC. I think it’s possible that classes might get reprinted into a new book in a remastered version (how likely is the magic question of course), and a handful of feats and other options, but generally I assume the books will just be quietly updated instead of reissued.

Honestly I'm not sure we would have had these core books either if they hadn't also decided to reorganize and redo the layout of three of the books. That seems to be what really drove making a new core set, not just the ORC compliance. If it had just been the ORC license, errata (and a new reprint) might have been enough for those books as well.

I feel like legal might have had a big say in it too. Its harder for WotC to claim any ownership when there's completely new books with new branding. If the legal threat grew any stronger, they might remaster all the remaining books with completely new names, but thats probably not necessary yet.

Yep, no new books being converted wholesale to Remaster beyond the initial four*; probably just a bit of errata here and there.
** spoiler omitted **
And would it be correct to say that those four books (CRB, GMG, Bestiary 1 and APG won’t be directly remastered under those titles, but as PC1, GMC, Monster Core and PC2?
My understanding is beyond that, any other pre-remaster PF2 books won’t receive PF2R editions, but some of their content, where applicable, will be…updated…in the ruleset (so Archives of Nethys….) to reflect the Remaster. Is this also correct?

Yes. Here is the original announcement from April. So far, the statements made there have happened exactly as described.

I'm going off fuzzy memories, but I believe they've confirmed we are going to get a new book covering the deities, so that is going to be cover some of the same ground as Gods & Magic. But it's not going to be just a "apply Remaster changes and done" kind of deal.
Yes : Pathfinder Lost Omens Divine Mysteries.
We will definitely get adjusted Edicts and Anathema that fit better with us adventuring types there.
Luis Loza even created a dedicated thread to gather the community's knowledge of these problematic E&A.
I love these Quality of Life improvements.
