I don't specifically jnow about exhaustion, but there are ways to overcome the immunities of undead creatures, such as the THRENODIC SPELLmetamagic feat. That one's probably not going to help with exhausted specifically, I'm just showing an example.
Does it have to be exhausted? What are you trying to achieve?

The Repose domain causes Undead touched with the Gentle Rest power to become Staggered for a number of rounds. That's about as close as I could get I think.

My current build operates using the exhausting critical feat but recently we have come across a bunch of undead enemies. I know that dropping the dex of an undead is essentially worthless but the -6 to strength actually helps my party a lot drunk guys combat because of the lower attack damage per enemy from mobs of undead. Since my crit range is 15-20 and I get 8 attacks per round I can usually crit 3-4 of them a round.

Well you have 2 problems - Undead are immune to Fatigue and Exhaustion, but they're also immune to damage or penalties to their physical ability scores (Strength, Dexterity, and Constitution).
If you're fighting undead enough you could go for Sickening Critical - it's not quite as good at lowering enemy attacks and damage, but it also effects saves/etc.

Yeah, undead are just going to be a problem for your build as they're immune to fatigue, exhaustion, and ability score damage. You would have to find something that would overcome those....and I don't think such a thing exists.
Also are you level 16 with greater two weapon fighting with and haste to be able to get 8 attacks per round?

15-20 crit range on 8 attacks is an average 2.4 crit threats, if you confirm 80% of them then it's under 2 crits/round. Usually 3-4 implies convenient memory or loaded dice.
There were a couple of spells which could make undead vulnerable to effects like exhaustion in D&D 3.5 but they weren't in the OGL and weren't replicated in PF1. I think in PF1 the only way to inflict exhaustion on an undead creature would be to raise it from the dead first.
