I always pictured a yellowy-white glow like the sun, although maybe they come in different colors like Light Sabers?
Rainbow colored.
Whatever colour suits the theme you are going for when you give it as loot, or whatever colour the player wants when they create it.
I designed a minor artifact brilliant energy greatsword for a BBEG that never came to be. I described it as the blade transforming into a gout of infernal flame. It's really whatever you want to describe it as, though I did slightly go against the flavor as written for my description.
Personally, I go for any color you want.
If you want to parse every inch of the text though, it does say they give off light like a torch, which you could take to mean flame colored.
“A brilliant energy weapon has its significant portion transformed into light”, so I guess you could assume it’s the same color as the significant portion of the weapon.

I always thought that they were supposed to look like lightsabres, only even more retro. Although they aren't up to lightsabre specs -- unlike Brilliant Energy weapons, lightsabres can damage non-living material (including Constructs) just fine. (Presumably lightsabres would work fine against Undead as well, but we haven't yet seen this put to the test.)

If you want Pathfinder light sabers, check out AP 100, they have them (technically it's called a Plasma Saber or something).

Plasma Blade. Of all the weird things, for it to appear in a book of Hell's Rebels rather than in a book of Iron Gods . . . .
If I remember correctly, Crystal Frasier tried to sneak it in to The Divinity Drive but it was cut for spacing reasons.
