This is a question for those who have already played the AP or read through it but I'm wondering which noble family from the noble scion feat in the player's guide would have the most interactivity? This could mean either fighting them down the line or serving as contacts in the rebellion but I would like to pick a family that has strong opinions over the rebellion in Kintargo and would do something about it. Any help?

All of the pro-Kintargo families have equal time in the AP. i'll put those ones in a spoiler and eschew all responsibility if your GM gets upset about spoilers.
The others are pro-Thrune or leaning that way, and each of them has a bit of spotlight time.

Simon learned medicine, and earns a fine living working as a surgeon. He earned private clientelle among other noble families. Life was getting comfortable and the sting of his familial disappointments had started to fade.
Until the house of Thrune had his father publically tortured and executed over trumped up charges. driven by grief and vengeance, Simon developed a guise he wears to protect himself when indulging his true feelings. The Thrunes will die. Bloodstone will be the sign.
Rebellion? A means to an end. One he has bet all his cards in.

I also have a Sarini in the campaign I'm running. She didn't even plan to join the rebellion at first; her family disowned her for appearance's sake after she was seen at the riot (she was there trying to get a glimpse of Shensen because she heard a rumor she'd be there). She ran to the mysterious people who'd saved her life at the riot for help, as she had nowhere else to go, and promptly got mixed up in La Revolution.
She started off kind of haughty, but quickly came around to the idea that the way her family does things isn't right. Now she's a Shelynite and the dedicated Party Charm Offensive.
I'm also adding some stuff with the Jhaltero family and the Council of Thieves thanks to the Adventurers' Guide giving me Ideas. (The Sarini character's sister is having a secret affair with a Jhaltero, and they're both trying to catch the attention of the Council. Which is very soon going to get them into trouble...)

I've got a pair of teilfing sister who's father is a Sarini, his family was paying thier mother (a teifling with pass for human servant/member of the lacuanfex) to keep silent about the children. The elder sister has pass for human and is acknowledged (privately) as a Bastard of the family, the younger sister is your typical angry young rebel.
