What should a bloodrager's caster level be set as? In the ACG, the only mention of a caster level is that a bloodrager's spell-like abilities gained from their bloodlines use their bloodrager level as their caster level. Should this be applied to spells in general, or should we treat them like paladins and rangers where their caster level is equal to their class level - 3?

In order for their blasting spells to be even REMOTELY useful they had to keep full caster level.
Paladins and Rangers aren't as reliant on Caster Level as Bloodragers since most of their stuff is utility/healing. The Bloordager spell list has some clunky blasting options like burning hands that would just by abysmal if they didn't have full caster level.

Yep, baring a note saying their caster level is modified by class feature or other special ability, the bloodrager falls under the rules for Caster Level in Chapter 9 of the Core Rulebook. "A spell's power often depends on it's caster level, which for most spell casting characters is equal to her class level in the class she's using to cast the spell."

Paladins and Rangers are Martial Classes that happen to cast spells. That's why 2 Paladin Archetypes which take away spellcasting and one Ranger Archetype that does the same aren't out of place: The spells from either class are really more of an afterthought (though in the Paladin's case there is pretense to have them there, since some of the Knights of the Round Table were supposedly adept at minor magic spells in some sources).
The Bloodrager is a Caster class without exception, however. It's also supposed to be a mage-knight like the Magus, but obviously be even more "HULK SMASH!" than the Magus.
Realistically, the only way to make a Ragemage without completely breaking it would be to either go Full-BAB & pseudo-casting, or 3/4-BAB and half-casting; since the Magus is already the latter, and the prior is more thematically in line with a Berserker hucking blaster spells, they made a compromise that the Bloodrager doesn't get spells until 4th level, but is Caster from lv1 officially (so you can take Metamagic feats before you get spells, weirdly enough)
