I would go human, because they are everywhere, you get skill bonuses against them, and yes, they are often involved in cults or as the necromancers themselves.
Evil Outsiders are also often a very good choice, broaden your horizons into being a demon hunter. It also makes humans make sense again, as there is often some meddling human cultists trying to raise Cthulhu... I mean, an evil demon.

on topic: I have found it odd from a RP standpoint when players take favored enemy humans. So either the player hates certain humans and knows how to hunt them, or they are detached and don't mind carving up whoever is in their way and know how to do it best. creepy!
You could try going with constructs too, another group of creatures that have false life.

There's a lot of way to rationalize it: You're a hunter, so you know how to hunt, most prominant race is human (and you may be human) so you probably know a lot about them.
If you were in a war, you probably fought against humans.
If you were around human settlements, you probably had to track lost humans.

As said, it is really campaign dependant.
Having said that, every time I have played an undead heavy campaign there wer also always lots of evil outsiders and constructs. Humans are also nearly universal.
So without knowing the campaign those would be my 3 suggestions: evil outsiders, constructs, and humans. Choose your own order.
