Does the Acadamae Graduate feat require you to use it every time you cast a conjuration summoning spell? Or can you opt not to and instead cast the summons as normal?

FAQ on the Matter:
Quicken Spell (page 132): Can you use Quicken Spell on a spell with a casting time of "1 round" (such as enlarge person)? Can you use it on a spell with a casting time of "1 full round" (such as a spontaneous caster using a metamagic feat on a spell)?
Yes and yes. Neither type has a longer casting time than the "longer than 1 full-round action" limitation of Quicken Spell, therefore both can be quickened.
This means that a sorcerer could cast an empowered quickened magic missile as a swift action. Likewise, as multiple metamagic feats don't push the casting time longer than 1 full-round action, a sorcerer could cast an empowered silent stilled quickened magic missile as a swift action.

You can cast it the normal way.
Acadamae Graduate (Local)
You have passed the grueling Test of Summoning and graduated from the Acadamae.
Prerequisites: Specialist wizard level 1st, cannot have conjuration as a forbidden school, Korvosa affinity.
Benefit: Whenever you cast a prepared arcane spell from the conjuration (summoning) school that takes longer than a standard action to cast, reduce the casting time by one round (to a minimum casting time of one standard action). Casting a spell in this way is taxing and requires a Fortitude save (DC 15 + spell level) to resist becoming fatigued.
The wording is a little off on the spell, however the second sentence alludes to being able to cast it normally emphasis mine.
A better way of writing it would have been to include 'you can' before the word reduce.

Champions of Corruption has the "Summon Evil Monster" feat which allows summoning monsters from that list as standard actions. None of the monsters on the list are particularly impressive and feat imposes a further limitation that summoned creature cannot act until the turn after it arrives.
The blackfire adept prestige class, at 1st level, allows character to obtain the "Sacred Summons" feat as if they had an "evil" aura. Prestige class requirements are very wizard/cleric friendly.

Sacred Summons does this for Clerics. This is a complicated option, as it depends heavily on deity's alignment, and usually only works for certain spell levels. E.g. It provides excellent options for 3rd - 6th level summoning spells cast by clerics of a Lawful Good deity. E.g. It doesn't work at all for clerics of a Neutral deity.
The best write up of Sacred Summons I've seen is in the Reach Cleric Guide. This is much more thorough than the feat description, which merely opens the door to a great deal of difficult research.
Also note that an Evangelist Cleric can theoretically cast Inspired Augmented Superior Sacred Summon Monster spells, which are quite a bit of fun. This archetype is probably the best non-Master Summoner summoner option in the game.

As far as I can tell, there are two monsters on the core rulebook Summon Monster III to VI lists that a Lawful Good cleric could apply Sacred Summons to -- the lantern archon and the hound archon. Most creatures on the Summon Monster lists don't have an alignment subtype.
Am I missing something?

Adding Summon Good Monster adds a few more creatures to the possibilities for standard action summons.
Also, since Murdock Mudeater mentioned the blackfire adept as a way to get an evil aura for Sacred Summons + Summon Evil Monster, I'll point out that Magambayan Arcanist will give a Wizard a good aura.

You're not missing anything. A cleric of a Lawful Good deity (no the same as a LG cleric!) can Sacred Summon a Lantern Archon for Summon Monster III, and a Hound Archon for Summon Monster IV. These are both excellent and very effective. Superior Summons encourages one to summon things 1 or 2 spell levels higher. Thus, Superior Sacred Summon Monster VI can be used to summon 3-6 Hound Archons as a Standard Action. Likewise, Superior Sacred Summon Monster V can summon either 2-4 Hound Archons or 3-6 Lantern Archons.
Both those summons are excellent. The hound archon, being martial, starts out strong but eventually becomes useless. The Lantern Archons, on the other hand, never become useless. Lantern Archons perform exceptionally well for an Evangelist Cleric, because Inspire Courage increases their 'penetrate all DR ranged touch' attacks. Each Lantern Archon will inflict about 10 HP per round on any big, easy-to-touch monster (think dragon or golem). So 3-6 Lantern Archons will inflict 30-60 HP damage per round on almost any foe.
All told, Lawful Good Sacred Summons comes online at 3rd level spells, and continues to perform well for 6th level spell. There are no good LG uses of Sacred Summons until one gets a Trumpet Archon as a 9th level spell.
I really hope Paizo improves on the list of creatures available to Sacred Summons. There ought to be about a creature every other level, for each alignment. Again, the Reach Cleric Guide addresses this very well. Currently only the 'extreme' alignments (LG, CG, LE, CE) can use Sacred Summons.
