Now that we have some official updates to the playtest rules, and GMs have been instructed to implement them right away, should we be considering those changes to apply to Pathfinder Society characters and scenarios as well?

Yes. We don't expect people to catch every little change, but please make a good-faith effort to apply the errata to your games. This allows us to give more accurate feedback to the design team about what people think of the game as it evolves.
However, we don't want to run into a situation where the errata bog down games or cause a lot of extra work for GMs and organizers. With that in mind, there is no need to update the pregens to account for any errata that are released, or to require players to update their characters on the spot at the beginning of a session to account for errata changes.
