Master Chymist would be fun. I'd quite like an alchemist that's much more down-and-dirty.
I'd imagine you'd trade some versitle vials for the ability to transform into your alternate form which has true martial scaling on its melee attacks. (Maybe even fighter if they want to get real spicy).
I'm sure there would be more to it, obviously the transformed state would need some downside to it, perhaps the loss/restriction of quick alchemy so you're incentivised to swap in and out.

I am hoping for the Winter Witch.
Back in 1e we had the Winter Themed Patron, The Winter Witch Class Archtype and the Winter Witch Prestige Classs.
In 2e we have the Winter Themed Patron: Silence in Snow but I would love a Witch Class Archtype that combines the class archetype and the prestige class.

I did love the ability of the 1e Winter Witch prestige class to deal cold damage to beings normally immune to it. My renegade Jadwiga Winter Witch really surprised (and enraged) a few Frost Giants as well as a Night Hag with that ability! ^^
