Sprite and Gnome with Fey-Touched heritage are both explicitly Fey creatures.
There are several other ancestries that could easily be considered Fey if the table desires. Kitsune and Tanuki being the ones that come to my mind first.
Edit: And Yaksha are an interesting case. They are explicitly originally from the First World (same as Gnomes), but they also appear to be explicitly not Fey.

I mean canonically fey o come from the First World.
So do gnomes and sprites. Could you elaborate a little on what you mean by "as some form of Fey"? Because if the two ancestry options that straight-up have the fey trait don't count, then I'm confused by what you mean.

Of published ancestries that actually have the Fey trait, it's as Finoan says. A few creatures are associated with Fey without actually having the trait, like the Yaksha (but not elves) and the other Gnomes.
For fey creatures which are not yet published ancestries but have the potential to be, there's gremlins, brownies, satyrs, and of course gathlains.
I would add nymphs like naiads and dryads to this list, though they would need a unique adventuring lore update so they don't die from leaving their homes. A huldra without regeneration would absolutely be doable. Redcaps and quicklings are technically possible but probably not in any meaningful sense.
