The solution is to NOT drill down into those details, to NOT think of the world as a simulation. Its a setting designed to let you tell high magic adventure stories with your character as the protagonist. And most people on these forums think it does a pretty darn good job of that (not perfect, but pretty good)Just accept the genre conventions, accept the rules as they are written. If you don't like something your choices are
1) Play a character that doesn't use things you don't like
2) Make house rules to change it
3) Find another game that is more to your tastes
Peoples tastes are different. Our tolerance for suspending disbelief for a story can change over time.
I do accept all these game conventions.
It can be fun to play more realistic games for a change. I wouldn't put Gurps into that catgory. Maybe Twilight 2000, which was pretty deadly and a typical wound could kill straight out even a great character.
Its just that I don't like taking on too many more abstractions. So yes I tend to baulk at some new mechanics. Especially when more realistic options would not unduly detract from the game.
Sometimes I do add house rules like Giants can't jump. I do want huge creatures to exist, but I can add a few more realistic limits if I want - while ignoring others that I view as necessary evils. Likewise I can make more detailed and complex societies if I want. Depends on my audience and our level of understanding of economics and sociology.

Seriously though, is anything rolls a crit in rolemaster the target is in a world of hurt. Some of my favorites are "your kick disarms foe. The follow up chop snaps his neck and subsequent flip sends the body 5' in any desired direction. foe dies" and "strike carries all the way though your foes head. Foe dies instantly. The action carries on through onto any nearby opponent."
Honestly, I don't think guards are going to care about foxes running around. They might be interested in the one fox that's too slow to run, though, just hobbling through the shadows. It might be a wizard's abused familiar desperately seeking escape from the mage that crippled it, after all! ;P
I'd only expect interest if it's acting particularly un-fox-like. As creatures wandering around usually aren't going full speed ahead, a leisurely 30' a round [around 1/3rd max] wouldn't be out of place IMO. If sneaking, it's even more expected it's be doing so slowly. And yes, faking a limp would be a good way to make the slower speed believable in a situation where the animal would go faster. [like a warning shot from a super-paranoid guard]

Lots of creatures have regeneration stopped by acid. I'd cast a level 2 acid arrow over a level 10 fireball on a single target fight with a creature that regenerates who's regeneration is stopped by acid. ^^

Why are the smurfing guards shooting every critter that crosses their path? Surely a populated area has anti-crossbow/bow laws in place. What if an errant shot hit a person? Crossbows are known for their penetration as well. What if it went through the fox and hit someone's child?
Think of the children! Contact your local lord today and push for more crossbow-control edicts!
