Currently a major difference between the core ancestries and (most of) the non-core ones is that there is less feat choice for the latter, specifically that in choosing a non-core ancestry you don't have access to a 17th level ancestry feat because one hasn't been printed yet.
You can always take a lower level ancestry feat, but this doesn't feel amazing when other ancestries get some cool stuff with their 17th level ancestry feat. In general, higher level feats are splashier and more impressive than lower level ones so it feels like a lost opportunity when you take a level 5 feat in a level 17 slot.
In a PF1 paradigm, this doesn't matter much because of how rare high level play was but PF2 APs all go to 20 and high level play is much more manageable. So I have to ask, are we ever going to get 17th level feats for more ancestries? Or more 17th level feats for existing ancestries. In the Ancestry Guide we got 17th level feats for the Iruxi, Leshies, and Hobgoblins so it would be great if we could circle back on some of the other new ancestries later.
I'm not sure how realistic this is, but the toolbox section in Strength of Thousand is a *great* place to put more ancestry feats for the Ancestries introduced in the Mwangi Expanse book.

I would like to see new ones as well, not only for 17th level but in general.
I know it's variant rule but it makes it kind of difficulty to make meaningful choices with ancestral paragon with the options we currently have. That being said the game shouldn't like focusing on catering to the players who play with a variant rule

There are some ways around this. I believe that all versatile heritages have access to 17th-level feats, and the adopted ancestry General feat gives you access to some 17th-level feats of other ancestries. Of course, getting some high-level feats for all ancestries would be ideal, but there are ways to get a feat of the appropriate level to fill that slot.

Sprites have a 17th level feat too. The new book did pretty well as several ancestries have a 17th level feat.
Beastkin, Hobgoblin, Ifrit, Lizardfolk, Duskwalker, Aasimar, Conrasu, Aphorite, Changeling, Catfolk, Sylph, Tengu, Tiefling, Leshy, Shisk, Sprite, Fetchling, Orc, Kitsune, Ratfolk, Oread, Dhampir, Undine, Goloma, Azarketi, and Kobold all have 17th level feats and some like Tengu have multiple ones so it's not like most heritages/ancestries [25 out of 35 have them, 15 out of 22 ancestries only] are left out. That isn't to say I wouldn't like to see every heritage/ancestry get one, just pointing out that it's not most.

Sure, but it could be a 9th or a 13th level feat too: even when there are 17th level feats available, I know I've picked lower level ones as they where better for me that the higher level one.
EDIT:
I believe that all versatile heritages have access to 17th-level feats
Not Ganzi or Suli.

Yeah, I doubt they will *never* print feats for newer ancestries - they seem to be on top of supporting everything they make pretty well so far - it's just most likely that when writing these books, after they slotted all the feats they created for those ancestries into levels, that none of them seemed to fit the power of a 17th level slot.
Core ancestries, of course, will always just have more options because the core rulebook ancestries not only came out first (so new non-lore rulebooks will almost always have at least a couple things for them just by association), but are meant to be "peoples that are common and permeate throughout most of Golarion". Thusly, even lore books have a small chance of containing things for them - since it's likely that there's a unique culture of them pesky humans even in, like, the Darklands.

BTW, do all currently published ancestries (versatile heritages not necessary) have at least 11 OGL'd ancestry feats selectable at creation and level-ups? I picked that number as to work well with the optional "ancestral paragon" (double a.feats) rules...
Yep. Heck, it's not uncommon to see 9 1st level feats alone. Between that, Adopted and Versatile Heritages, there shouldn't be any issue finding enough feats to pick with the Ancestral Paragon option.
