In society play?
This question would be better suited for the organized play section, but in general I believe the answer is no, you don't get to go mine minerals/metals.
But you can use your mining lore to make a Earn Income check which can be flavored as your doing mining related tasks (though not necessarily physically mining yourself). In fact I would actually say the physical act of mining isn't the Mining Lore skill.

Lore skills are about knowledge, not physical activity. So you use the skill to act as a foreman for a mining site to Earn an Income, or maybe to help survey or pick possible mining locations. You could visit mines as a contractor and identify places where the load-bearing supports need to be reinforced or where caveins are likely. But it isn't likely the physical act of mining with a pick, as that doesn't require knowledge as much as strength. Still, if you wanted to physically mine the GM might allow a Mining Lore check using your strength modifier instead of intelligence, but that relies on GM fiat.
There can be some overlap, of course. For a physical skill that requires a lot of knowledge while performing it, like traditional painting or crafting an instrument, using a Lore check with intelligence may be appropriate.
No idea how this is handled in society play though.

I'd rule it as an Earn Income with the task level depending on the type of minerals available; low for a coal or salt mine, high for gold, even higher for fantasy minerals. Mining is not just about digging, it requires you to know which rock flakes are valuable mineral and which aren't worth the trouble, how to hit the rock exactly at the cleaving plane so it breaks easier, and so on.
Having said that, I've no idea if Society has any sort of ruling for extractionism. You could theoretically do the same with Logging Lore and valuable woods or anything like that.

There's no mechanism for getting ore or using Lore Mining to create items. If you wanted to craft a sword or armor or something, you would need the Craft skill. You could use Lore Mining to earn income to pay the initial starting cost to Craft and just pretend it's the metals, but fundamentally you'd just be abstracting money.

Exactly, and money is just abstracting value. There's no specific subsystem for prospecting because the preexisting ones (Earn an Income on Lore) already covers it.
Edit: Besides, if you need precious gems or somesuch for a spell's material component and it's not available for sale but you do have access to a relevant mine, it's fine to just abstract it.

To me lore skills could also mean that you are able to phisically perform.
For an instance, a character with minerali background will be able to extract ores from a mine. And the better he gets, the better thr ores he could get ( eventually he could simply manage a mine without working, but Acting as a minerali chief ).
The same goes for a Farmer, or a barkeeper.
If we are talking instead of a crafter, like the tinker background, the background will provvide you both craft and lore skill.
Otherwise, you will be needing just the lore one.

I was wondering what the skill lore mining will my character benefit for in society play. As I can see, we are allowed to craft but are we allowed to do any extraction of precious metals as well since my character has trained knowledge skill in lore mining?
