I doubt there is any real rules in place here, but I played a cleric that used stoneshape+animate object to make living chess pieces (stone shape w/ quicken meta magic rod; we were quite high-level). I used stone shape to create a size category large Rook chess piece under my feet. In order to not fall of during this process, and stay on top of the chess piece my DM had me roll Acrobatics. I'm not sure if ride is what we should have used, but thats the weirdest/best use of acrobatics I've seen.

I was playing a Soulknife from Dreamscarred Press' "Ultimate Psionics". The BBEG was holding the damsel in distress with one hand by her feet over a burning pit. My character took a running start and beat a DC 25 Acrobatics check to leap across the pit to grab her and carry her to the other side with my momentum. The GM ruled that when I did that and landed on top of her I did 2d6 points of damage to her because she broke some ribs. She lived through it.

I have three scenes:
1: My ninja is in 3' of water, on the same side as the party from a large monster we wanted to kill. So, using Light Steps, I jump up and land on the water, run across it around the monster as a full round action, acrobatics to avoid provoking an AoO, and stop on the water on the far side. Since the water cannot support me, I fall the 3' into the water. At the end of my round, I am flanking the creature allowing the party to get better attacks and I get sneak attack.
2: Running off the side of my ship, and jumping the 80' to the other ship. They weren't ready for me to be there so quick. Fun times.
3: We are in a cave going after hovering monsters 20' up. I started jumping up 20' to make a single attack at the top of my jump. Since I was invisible, I got sneak attack. Might be a bit loose on the rules, but the GM allowed it.

As a GM, I'm running a game in the far north. The party was in ice caverns, on a bridge of ice, when a mighty white dragon flew up from the depths below,breathing on the bridge. The barbarian raged,and leaped from the bridge onto the dragon, burying her greataxe into its neck (and almost falling from the dragon) as the party let loose. Within the round, the dragon plummeted to its death, breaking the barbarian's fall.
By the time the party got below, the barbarian had struck a pose - one foot on the dragon's head, the axe buried in the back of its skull.
Other than that, back in 3.5 I played a spiked chain fighter that practiced parkour. Many great moments.

For a high-lv oneshot I managed to make a bad feat into the best feat.
Sliding Dash suffers from a very high skill DC, for a benefit that's mechanically not very impressive. You charge someone, and make a CMD+10 acrobatics check to end up at the other side of them with an additional penalty to AC. Probably surrounded by enemies, too.
However, six levels of Hussar for the ability to make acrobatics checks in place of your mount, and you can do this!
