The Guild Guide is the guide that introduces players to society play- AND IT'S FREE.
The Field Guide is a companion book with optional material for players to use.
All players, GM's included, should have a copy of the Guild Guide when they come to play. it has information on the various factions and their goals, how Day job checks work and how much you get, what happens to treat diseases and permanent effects [like curses], and other pertinent information.

The seasonal Guild Guide is updated and published annually. It is the definitive Organized Play document. And it's free.
The Field Guide is a rules supplement like an setting book or player companion that was published in 2012 for pay that you can still buy the PDF for. It is never updated, and it costs money. Unless there is a legal character option in there not reprinted somewhere else that you want to use (I forget which book has Wayfinder/Ioun Stone resonance and if there are any vanities in it), you can definitely skip it.
The better resiurce on the history of the society and the factions is the seasonal faction summary, also free and updated annually.

There is also the player companion Pathfinder Society Primer much in line with the Field Guide. It, too, is optional. Useful for the vanities.

As others have said, the Field Guide is a sourcebook that's getting older. Between vanities, useful items and information on Absalom, there's probably more in it than the typical Player Companion, but that's the sort of comparison. Ioun stone resonance started in Seekers of Secrets, a very early counterpart of the Field Guide.
Several elements from these have been revised by later books, as Additional Resources and Campaign Clarifications should explain.

The guide was lovely, thank you! Someone had actually already pointed out this guide to me, in another thread, but I am not sure if you had a reference to the field guide somewhere. Paizo should make PFS more beginner friendly, the way you did.
