Alchemists don't get alcoholic beverages for the most part. There's an archetype which does, but it taking it excludes you from the better alchemist archetypes.
I struggle to be impressed by monks, especially drunken master. Flavour good, power not so much.
There is a prestige class which uses booze though. Brewkeeper; while it can advance alchemist extract use it's probably better off a full spellcaster, it doesn't advance any other alchemist class features. A cleric of Cayden Cailean is the obvious choice.

Well, I always like pimping out this Quiggon Drunken Master Monk build.
To summarize the major benefits: Every round you will spend a swift action to drink. You will gain your level in temp HPs every round. You get 2 points of ki to spend on quiggon powers. Depending on character level, you might have nearly all of the bonuses from Drink is Life already but being able to get an extra bonus that you can switch every round is nice (since you drink every round). Oh, also among your Quiggon powers is the ability to cast restoration on yourself, heal a decent amount of hp, and cast Dragon's Breath which gives you access to 4 different elemental damages. Oh, and you'll be able to dimension door.
BTW: even those it is a monk, the character I built isn't a melee. This is a blaster that can stand in melee. Saves are going to be outrageous. AC should be one of the best in the group. Touch AC should be the best in the group. Honestly, you might not be the biggest threat in the group, but taking you out should be ridiculously hard.
