Hand of the Apprentice (Su)
You cause your melee weapon to fly from your grasp and strike a foe before instantly returning to you. As a standard action, you can make a single attack using a melee weapon at a range of 30 feet. This attack is treated as a ranged attack with a thrown weapon, except that you add your Intelligence modifier on the attack roll instead of your Dexterity modifier (damage still relies on Strength). This ability cannot be used to perform a combat maneuver. You can use this ability a number of times per day equal to 3 + your Intelligence modifier.
Spell Storing
A spell storing weapon allows a spellcaster to store a single targeted spell of up to 3rd level in the weapon. (The spell must have a casting time of 1 standard action.) Anytime the weapon strikes a creature and the creature takes damage from it, the weapon can immediately cast the spell on that creature as a free action if the wielder desires. (This special ability is an exception to the general rule that casting a spell from an item takes at least as long as casting that spell normally.) Once the spell has been cast from the weapon, a spellcaster can cast any other targeted spell of up to 3rd level into it. The weapon magically imparts to the wielder the name of the spell currently stored within it. A randomly rolled spell storing weapon has a 50% chance of having a spell stored in it already. This special ability can only be placed on melee weapons.

Like Azothath says. Though the same sort of text stops thrown weapons working with the anchoring weapon enchantment, you can explicitly put anchoring on a thrown weapon but can't activate anchoring unless you're wielding that weapon. Fixing that should also allow spell storing on thrown/hand of the apprentice'd weapons.

I disagree with that interpretation. The weapon couldn't be thrown if it wasn't wielded.
If there's an FAQ (or even developer comments) I'll concede, but otherwise that looks like interpretation rather than RAW to me.
Since there are 2 conflicting interpretations however, this is probably a case of "ask your GM".

We had that topic a week ago:
CRB pg. 141:
"Thrown Weapons: Daggers, clubs, shortspears, spears, darts, javelins, throwing axes, light hammers, tridents, shuriken, and nets are thrown weapons. The wielder applies his Strength modifier to damage dealt by thrown weapons (except for splash weapons)." emphasis mine.
By the time you make the damage roll, the weapon has already left your hand, yet the CRB still calls you "wielder". Therefore, a thrown weapon must count as being wielded at least until the ranged attack is fully resolved.
Hand of the Apprentice uses the thrown weapon rules, thus the above principle applies as well.

I concur, so Yes to the OP as it is a thrown weapon. I learn something from here now and then. Thrown weapon basics...
other comments;
Anchoring (+2), I think that is a clearer case. If the weapon had Returning it could not return due to the text of Anchoring. That's something a GM should clarify to a player (with or without the NPC charging a small research fee). Sharding (+2) yields a more complex case.
another poster, hmmm, interesting interpretation but correct as the OP didn't make a distinction as to the usage. I don't think that's what the OP intended but hopefully he will post and clarify.

No you cannot use Spell Storing on Hand of the Apprentice because it is not a spell. It is an arcane school power, not a spell. Spell Storing allows you to store and cast a spell, not a class ability.
While I am not the OP, it seems logical the OP is referring to spell storing the weapon enhancement based on their quote and that they are enhancing a weapon which will be used with hand of the apprentice, not storing their ability in the weapon with spell storing.
