How to scale Drakkus from Lost Star down to fit a party size of 2?

As the subject indicates, I want to run the lost star for my wife and son. Every encounter is very easy to scale thanks to the tables in the bestiary. Just Drakkus does not fit into the tables, he is one level 3 creature. What can I do so that he not outrights slaughters the small party?

The Bestiary has guidelines for adjusting encounters on page 21.

Drakus is a High encounter for a Level 1 party of 4, worth 80XP. According to Table 5 for a High encounter, you need to subtract 20XP for each character less than 4 in your party, so the encounter needs to go from 80XP to 40XP. This means that the foe has to be equal to the party's level.

Since you can only apply the Weak template once, using it here would mean Drakus is still too strong.

I'd suggest replacing his stats with a reskinned Level 1 creature in the Bestiary.
