One feature I really enjoy, is the customization options given to you in all the different source books, player companions, and the like. Do you think in Pathfinder Second Edition they will bring back base and hybrid classes, (Inquisitor, Summoner, Arcanist, etc.) and featured races (Drow, Tiefling, etc.)? I would also enjoy seeing the return of archetypes and subclasses. All these options is what brought me into Pathfinder, and seeing them not in the new edition will make me very sad. What do you guys think about it?

Depends on how multiclassing works out and whether or not Paizo wants to focus on fully fleshed archetypes rather than new classes. I could see investigator and shaman making their way in because they're both pretty unique despite being a combination of two other classes, possibly brawler due to the unique nature of its defining ability.

Races are easy to convert. Take the current writeup, give them an extra +2 to something. Remove all of their racial traits that aren't speed, size, vision. Give them some hit points (look at the core races and give them an amount that is equal to whichever race they are conceptually closest to) and then boost 2 or 3 of their racial traits until they're equal to a feat.
I'm sure plenty of 3PPs will be more than happy to assist with the above if you aren't comfortable doing it yourself.
Classes are a whole another matter. With the complete removal of backwards compatibility there are no easy conversions you can do. I'd be looking at whatever class features are closest to a feat in terms of power level and then making them either class feats for one of the pre-existing classes or a theme. The biggest trouble will be in classes that completely break the mold in terms of how they're structured compared to the new unified structure. I wouldn't be holding my breath on them getting an official Paizo writeup (except maybe Kineticist?). 3PP's may get to it for you eventually. Or they may not.

With the extra classes established, the base classes could be designed to have archetypes that match many secondary classes.
The rogue could easily have the investigator, the fighter could have the gunslinger and cavalier, the bardbarian has the bloodrager, the monk a brawler archetype, the bard has the skald, and so on.
We don’t need the 35 classes of PF1.
Races are easier, having less of a bloat effect and impact on the game.
The elemental races could probably be combined into one geniekin race.

They've stated that they want to make all then options you had in PF1 available within the first few years (note that they want to, not promise to).
That doesn't necessarily mean we'll get all the same Classes back (the Swashbuckler may be unnecessary if the Fighter and Rogue can do that Archetype well enough, or the Gunslinger may be an Archetype for any Class, or multiclassing Barbarian and Sorcerer may be viable making Bloodrager superfluous) but the more unique ones should be back, and we should get most Races as Ancestries.
