Title says it all. Assume starting at level 5. Stat array of 17, 16, 15, 14, 13, 12. Any Paizo race / class allowed. Also it's for Rise of the Runelords if that matters.
Some options off the top of my head include Admixture Wizard with Crossblooded Dip or Admixture Wizard // Arcanist for Int Synergy, spell staying power, Arcanist Exploits, etc.
I guess if you wanted to go a bit more gish you could do something like Scaled Fist Monk 1 / Paladin 4 // Sorcerer 5 and go into Dragon Disciple.
Honestly Sorcerer X // Paladin 2 / Scaled Fist Monk 1 / ???? X sounds like a pretty solid option, if not the most powerful strictly from a blasting standpoint, its a lot of defensive power in those 3 levels.

Blood arcanist (some handy bloodline for blasting) w/school understanding (admixture) can cover most of your blasting needs, and that's just one side of the gestalt. On the other side you might go defensive as you suggest, or you might say to yourself "How about some sneak attack on that?" and stack up some rogue, ninja or vivisectionist alchemist levels. Slayer splits the difference between defence and offence and adds some accuracy.
You need to narrow down what you want or need a bit in order to get more definite answers.

I would go as suggested, Blood Arcanist with the mentioned orc bloodline with battering blast as the main blasting spell.
It's the other part that is more relevant. You could take another caster to make sure you will always have high amount of spell slots so conserving slots isn't an issue. But one thing I found quite interesting is making a Stalker Vigilante. You essentially get 1d8 sneak attack, and from your arcanist you have access to all the important sneaking spells, but another key component is Blind Spot vigilante talent, that allows you to bypass all sorts of shenigan senses and still benefit from stealth. Cunning feint is not a bad talent either to combo with this.
