So I rolled a set of dice that have me a limited wish, but I had to use it right then and there, and since I already had see invisibility active on myself, I chose permanency so that it would stay on at all times (I'm a halting Arcanist at level 14) because I had to pick right then and there. It'll undoubtedly come in handy.
But then I started to wonder -any better choices out there for a one-off limited wish casting?

Permanency is a pretty good choice. Technically I would still require you to provide the 5,000 gp. additional cost to cover making see invisibility permanent (which maybe you did). That seems like a really good choice to me.
Otherwise, the spell basically just duplicates spells unless you are trying to think of something personal and nonstandard. A painless vasectomy, really cool tattoo, cure for baldness, etc.

Oops . . . when I first read this I had The Invisible Man and Dark Templar on my mind and thought you said Permanent Invisibility.
Just noticed that Permanency is now 5th level -- I could have sworn it used to be 8th level a LONG time ago . . . .

Permanent see invisibility is undeniably useful. If there was a powerful enemy nearby, you could have used geas on them. If there was a corpse of a valuable ally nearby, you could have used raise dead on them. If your GM allowed it, you could have created an overwhelmingly powerful simulacrum. Or you could have done something more unusual, like drawing yourself a symbol of persuasion to have on hand for just the right moment.

It was an unusual situation-essentially a god had been killed and parts of his bones had been made into a set of dice with a range of odd effects from instant death to a clucking magic item to bestow curse to Wish itself, which is why my DM didn't charge me extra, as it was a direct result of rolling the dice (I was the only one in the party courageous/stupid enough to roll them).

Checked my AD&D PHB, it WAS indeed lvl 8 at the time, and I assume it stayed that way throughout 2nd ed.

Yep, 8th level in both 1st and 2nd edition.
