I removed material components for spells from the game I GM for my husband - it's just us two and neither of us liked them. This is excepting expensive components. So it's like everyone has 'Eschew Materials'.
Therefore I wasn't sure if I should do anything about the Eschew Materials bonus feat Sorcerers get now being redundant. Should I give them a different one, or does it not really matter?

It might be nice to give them something, since you're basically giving every casting class besides them a free feat.
Simply giving them spell focus to a school of their choice would probably work. Or a selection for a the 3 schools that fit their bloodline best, so a Draconic one could choose between, Evocation and Transmutation maybe?
although that seems like work.

I've considered actually making people pay for "costless components" (I.E. assign a value to them, such as 1 sp each) simply because it seems silly to me that we have a feat whose only purpose is to replace carrying a particular light, inexpensive object. Spell Component pouches would then contain their market value in "costless components" (50 spells in this case).
But yeah, if your going to remove the concept entirely, classes that get Eschew Materials for free should replace it with something similarly useful to them. Skill Focus is fairly useful, but limiting it to the skill associated with the sorcerer's bloodline makes it less abusable. Other options might include Combat Casting, Expanded Arcana, Magical Affinity, and Spell Penetration.

I would support the idea of allowing Skill Focus in the bloodline skill as an option, but forcing it as the only choice might be bad for characters like Half-Elves who already get a free Skill Focus feat from their race.
it also really sucks for those whos bloodlines have really bad skill focuses like skill focus appraise or perform or the bloodragers who get the feat but whos bloodlines don't have a class skill

Then you missed the point of the feat.
Eschew Material is a "high level" feat, which lets wizards and sorcerers cast spells when polymorphed into a dragon (and the like).Otherwise, an extra bloodline feat seems indeed appropriate.
