i was trying to think of a way to make one of those explosive spear throwers from mad max.
Definitely need levels in alchemist:
But other than that i was thinking maybe fighter, ninja, unchained monk archetype, unchained rogue archetype. I am really not sure where to go from there.
Any help would be much appreciated, also starting level is 4 and I would like to build this character to epic if possible.

Grenadier Alchemist has you covered, add an alchemical weapon to a javelin, focus on physical abilities more than Int and you're set. You might want a level or two in fighter if your plan costs a lot of feats (throwing builds often do) but it's not otherwise essential.
Assuming a 4th level human grenadier the feats might go like this:
1: Quick Draw
Human: Point Blank Shot
Alchemist 1: Throw Anything
Grenadier 1: Martial weapon prof. (some scary-looking melee weapon)
Grenadier 2: Precise Bombs
Alchemist Discovery 2: Scrap Bomb
3: Precise Shot
Alchemist Discovery 4: Elemental Mutagen (fire)
Which gives you the option of throwing flaming javelins, scrap bombs (piercing + bleed) or normal fire bombs. You can easily swap to a melee weapon when required, and you have fire resistance 5 and +2 to acrobatics which may feel right. Continuing on the same lines,
5: Rapid Shot
Alchemist Discovery 6: Spontaneous Healing (to help you survive suicidal tactics)
Grenadier 6: Directed Blast
7: Opening Volley
Alchemist Discovery 8: Fast Bombs
9: Power Attack
Alchemist Discovery 10: Force Bomb
11: Extra Discovery (Explosive Bomb)
Alchemist Discovery 12: Greater Mutagen
13: Far Shot
Alchemist Discovery 14: Siege Bomb
15: Improved Critical (bomb)
Alchemist Discovery 16: Grand Mutagen
17: ??
Alchemist Discovery 18: ??
19: ??
Grand Discovery: True Mutagen, 2 more discoveries
Many of those could be taken in a different order if desired.

When attacking with the explosive missile discovery, do I have to hit the enemies touch AC or do I have to hit their normal AC.
Normal. The main advantage is range, though you can add some damage from the arrow and any alchemical weapon you have infused into that arrow.
Edit: And of course any enhancement bonus or similar you have will apply when firing a bow but not usually when throwing a bomb.

Those are very impressive stats. 3 18's, 2 16's and a 14 before racial mods? That's the equivalent of a 76 point buy. You should be a pretty impressive character with that.
Anyway. If you have force bomb and scrap bomb you don't need acid bomb. Blinding bomb is dubious too - force bomb knocks people prone which is a decent debuff. Remember you mostly can't combine bomb discoveries, explosive missile and fast bombs excepted. Spontaneous healing is a useful discovery, dispelling bomb and Infuse mutagen are worth looking at too.
You probably want to start with 2-6 levels of alchemist or the whole 5 levels of gunslinger if you're going to multiclass.
For your remaining trait an initiative boost, or Deadeye Bowman (requires worshipping Erastil) or Defensive Strategist are all good.
