Is there a rule that would prevent you from taking Accomplished Sneak attacker multiple times, as long as your meeting the rule that your sneak attack die total cant exceed half your level?
I realize it doesn't say you can take it more then once, and just assuming you can would lead to people taking power attack, weapon focus, etc multiple times.

Does the feat turn off if you later gain more sneak attack? like at lv4 you have 1d6 sneak attack and get it. Then at 5 and 6 you take rogue and snakebite brawler to get +2d6. Which would make your total 4d6 at lv6 with the feat if the feat still works. Or would the feat stop working?
Yep. It's got a "to a max of" clause, if I recall correctly. Failing that, not meeting the requirements turns a feat off in general.

And would that mean if I then proceeded to take levels in classes that grant sneak attack at lv1 to be 7d6 at lv10, that because I took this feat earlier my sneak attack is limited to 5d6?
The way the feat is worded, this would appear to be the case. The second sentence appears to add a restriction to your sneak attack ability.
(If I had written it, my wording would have been "You do not gain this benefit if your number of sneak attack dice would exceed half your level." But I didn't, unfortunately.)
