Has there been a list created somewhere that shows the options a Cavalier can select from regarding:
In addition, a 7th-level or higher Medium beast rider can select any creature whose natural size is Large or Huge, provided that creature is normally available as a Medium-sized animal companion at 7th level (like a bear). To generate statistics for such a mount, apply the following modifications: Size Large; Ability Scores Str +2, Dex –2, Con +2. Increase the damage of each of the mount's natural attacks by one die size. A beast rider cannot choose a mount that is not capable of bearing his weight, that has fewer than four legs, or that has a fly speed (although the GM may allow mounts with a swim speed in certain environments).
While I must admit, thematically a bear would be awesome but I was wondering if there are some other nice choices.

So you basically can have anything on the druid animal companion list that is still medium at 7th level and can support a rider.
Things to consider:
Is your mount also going to be attacking?
Do you care about having a mount that people are afraid of affecting their reaction to you?
Are some animals off the table due to environment?
The list is pretty extensive, though it may depend on your weight and its Str score:
CRB Druid List:
Badger
Bear
Boar
Cat, Small (Leopard)
Crocodile
Dinosaur
Dog
Monster Manual Additions:
Goblin dog
Hyena
Monitor lizard
Ram
Giant Gecko
Kangaroo (can you mount in a Huge Kangaroo's pouch??)
Thylacine
Really, none of those may be better than the list already presented for a 4th level Medium Beastrider, which includes most of the huge dinosaurs. How do you not choose Tyrannosaurus? :)
Medium beast riders can choose a camel or horse mount at 1st level. At 4th level, a Medium beast rider can also choose an allosaurus, ankylosaurus, arsinoitherium, aurochs, bison, brachiosaurus, elephant, glyptodon, hippopotamus, lion, mastodon, megaloceros, snapping turtle (giant), tiger, triceratops, or tyrannosaurus as his mount.

gecko, large = charge on ceiling and walls.
Boar is nice stat and damage.a raptor, large size is.... scary!

Curious....would a Dire Wolverine be an option? Basically select Wolverine as AC, and then make it Large sized and flavor it as Dire.
Admittedly, I have an issue with bringing a TRex along. It just feels wrong. However, a Velociraptor might be interesting. My question revolves around the requirement of having four legs as its basically bipedal. Granted, A Trex is as well so not sure how this would be ruled in PFS play.

T-rex is specifically allowed by the archetype so no worries there.
