Mystic Past Life (Su): You can add spells from another spellcasting class to the spell list of your current spellcasting class. It will become interesting at higher levels. At first a mithral full plate is pretty expensive (and probably not affordable), but later it would become useful.

Races there are 2 good possibilities Dwarves, and Half-orc.
Dwarves because of their immunity to encumbrance due to carrying capacity but that can be easily compensated if u buy Muleback Cords for a Half-orc.
Why Half-Orc for a tank?
There are 3 feats that will make a good use to a tank deathless initiate, deathless master and deathless zealot which gives you this possibility:
Benefit: Whenever a creature rolls to confirm a critical hit against you, it must roll twice and take the lowest result.
Class obviously the fighter can be the best option, there are two good archetypes in my opinion for that role: Unbreakable and Armor Master.
You can take any of those archetypes and level them up full on those clases or you can wait till level 7 and from there take the prestige class Stalwart Defender that is the tank class for excellence.
I'll post my favorite build for a tank hope you like it.
Half-Orc Fighter(Unbreakable) 7, Stalwart Defender 6
Feats all way to level 13(my recommendation)
Taking Unbreakable archetype gives you 2 bonus feats at level 1.
level 1. Toughness Bonus Feats: Endurance, Diehard
level 2. Tenacious Survivor (you'll find it very useful if you get massive damage).
level 3. Dodge
level 4. Ironhide
level 5. Shield Focus Bonus Feat: Heroic Recovery
level 6. Deathless Initiate
level 7. Fortified Armor Training (you can do a great combination with an armor/shield made of living steel special material).
AFTER THIS LEVEL I WOULD TAKE STALWART DEFENDER LEVELS.
level 9.Deathless Master
level 11. Ferocious Resolve
level 13. Deathless Zealot

Well about this I certainly think you should consider on taking a heavy armor specially the mithral full plate that Threeshades mentioned.
If you dont want a heavy armor then i guess the breastplate is the best option.
My recommendation:
Mithral Full Plate Armor
Heavy "Living Steel" Shield
A long sword or a scimitar are a good combination with a shield.
I forgot to add that all skill points spent on survival would be wise since it will give you a +2 on fortitude checks against weather if you are moving and a +4 if you are stationary. this plus the bonus of endurance will make you good against the fortitude checks.
I another way to deal with fatigued and exhausted condition is to buy a wand of lesser restoration made by a paladin which will cost you 750 gp instead of the 4,500 gp if its made by cleric or any other class

I would say go Elf Kensai Magus. At first level grab the Weapon Finesse feat and work to qualify for the Dervish Dance feat (just takes two ranks of the Dance skill). At third level also grab the Spell Blending (Mage Armor) magus arcana and you will have a pretty decent AC without even having to buy armor. For your stats I would go

DEX 20
CON 12
INT 18
WIS 8
CHA 7
At level three you should have an AC of 26 with just Shield, Mage Armor, and a Scimitar wielded. Even higher with magic items. Also, DEX will be providing your damage instead of STR so get a handy haversack ASAP.

invulnerable rager barbarian with sword and board and 3 lvls of horizon walker making you imune to fatigued condition in the desert is quite nice also you gain favored terain Dessert!
having a large con and some defensive feats would make you pritty sturdy just remember you dont need a high str like 20 with a barbarian 16 or so would sufice as you rage you go up to 20 a high con and raging vitality would give you a verry high CON

I second the idea of the invulnerable rager as they get indure elements at level 3 and minor fire resistance, good damage reduction, superstition makes you resistant to spells, d12 hps makes you naturally tough and rage boosts your con even more. later on horizon walker will make a great prestige class because of the favored terrain bonus, favored enemy bonus, immunity to fatigue, fire resistance and flavorful to boot. Sounds exactly what you are looking for.

Invulnerable Rager or Unbreakable Fighter.
I always go with Half-Orc or Orc for either if I'm making a heavy tank build taht can take a ton of punishment.
Why half-orc or Orc? The Deathless feat tree. Probably one of the best at upping survivability in the game.
Basically, your guy will never fall down AND all criticals will have to re-roll against him.
If you want someone who can shrug off damage then go Invulnerable rager.
If you want someone who won't fall down and eventually will become immune to mind magic, then go unbreakable.
Invulnerable is a good choice if you want to go Stalwart. There's a guide here that suggests a level or two of unbreakable then full invulnerable, for the purpose of using the Stalwart feat tree.
Neither is a bad choice in my opinion. But I prefer not to multiclass, and absolutely LOVE the Unbreakable archtype.
