The loss of flavor I'm referring to is turning both the Dwarven Defender and the Arcane Archer into any race classes as opposed to being distinct racial classes.

Hooray! I don't think many players paid any attention to that restriction since the start of Pathfinder and even during 3.5. It was a stupid rule.
Even now, I don't like most racial restrictions on feats either. If it's not strictly tied to racial biology, anyone can learn it. It might be less likely for some, but I would allow an orc to take gnome feats that are based around skill and talent, for example.

I think Paizo has to make up their mind to either have options be race restricted or not, having PrC opened to have favored class options closed and feats limited by race accomplishes exactly nothing but a remix of options. Personally I find nothing wrong with options being race restricted, I rather have AA restricted to elves and houseruled in specific campaign settings than vice versa.
A homebrew campaign that denies options is frowned upon more than a homebrew that gives additional options, even if just for specific organisations.

Well, since nobody in my groups has ever expressed an interest in Arcane Archer and I've never even gotten around to including one as an NPC, I think I'll be able to endure this particular bit of errata. Saying nothing against the class - it's just that the archer/mage who's willing to reduce his arcane abilities in exchange for more archer options is a prettey specialized role even without the race-lock.
That said, I do feel that "secret one-race-only training" is/was an understandable restriction when one considers that inter-species genocide is a part of our favorite game, i.e. "Goblin! Shoot to kill!"
