You could take one from the list, recombine syllables, or check lists from related ethnic groups like Scandinavian, German, Danish, etc. You can take a modern name and trace it to its roots to come up with a more exotic version, such as Henry-Heinrich-Heimrik.
For the surname, take a syllable from the first name list and add -ssen if male or -dottir if female.

I named my PFS Ulfen ranger Ívarr Ulfrikssen. The first name means "bow-warrior" (he's an archer), and the surname is wolf-ruler's-son. He isn't actually the some of a current ruler, but his family has kept the name for a few generations from the point that they were descended from a king.
