Since someone mentioned it, Xenosaga.
Xenosaga I was fun, but felt more like a movie than a game. I mean, there's a point where you fight a boss, save, see lots of cutscenes, then save again all without needing to touch the controller. There needed to be more action, less talk.
Xenosaga II gave us ES battles. But they were boring. And in regular battle you needed to combo your enemies to kill them in any reasonable amount of time. Enemies learn abilities far earlier than you and your damage doesn't rise nearly as fast as their hp. Double-teams were sometimes fun though (like Grand Rondo; KOS-MOS needed dance lessons, badly).
Xenosaga III was decent overall, but too little too late. Because the series was finished off after 3 games instead of the original 6, things got rushed.
Overall:
1) Fewer cutscenes. If I want to watch a movie, I'll watch a movie.
2) Decent combat. I liked fights in I and in III they were okay, but II gives me shivers.
3) ES combat. Use III's model, not II.
4) Characters. In terms of combat ability, MOMO was pretty weak. You didn't have enough EP to really utilize her superior Ether Attack stat and she didn't really want to be hitting people in I. In II, the weaknesses of enemies made her more useful, too bad she was fragile. Then we have Ziggy and KOS-MOS, a full-conversion cyborg and a battle android, neither of whom is really that much better than the other characters in battle. Some differentiation is nice, but more was necessary.

So, in addition to some of the great games here, I would like to add a series: Phantasy Star
Number 1 was a good game plagued by the graphics of the Master System. It was as epic as the original Final Fantasy, with an awesome Sci-Fi twist.
2 and 4 were great games I would love to play through again. 4 is one of the best RPGs I have played.
3, if remade, could be made playable by increasing the speed your character walks. I hear its a great game, but was not able to stand it because it is so slow.
Also: I hear they are re-releasing Planescape:Torment (and Baldur's Gate). Not sure if those rummors are true though. There is a game editor that can be trivially used to up the screen resolution. Going from 640x480 to 1900X1600 cleans up the graphics alot. You can also copy the discs to your harddrive and reduce load times dramaticaly.

It's hard to resist this thread.
I'd have to say that X-COM, Master Blaster, and Master of Magic (maybe even Master of Orion, though the last incarnation was WAY too complex) are all high on the list, there is one game/series that absolutely, positively needs to be remade for modern technology:
X-Wing/TIE Fighter/Alliance
Those would be fantastic games to play, especially over the net with buddies. Heck, you could even do Clone Wars and other EU ships, as long as you kept the Rebellion Era fights.
And NOT Battlegrounds or arcade-style. I WANT a 'simulator,' and they did that well without being overwhelming in the controls. Enough so that when I read the X-Wing novels, I knew how they were controlling their snubfighters.
Seriously, I might offer my leg (not my hands, I'll need those to play) for well-made versions of those.

And I would be down with a good Castlevania featuring Sonia Belmont in a heartbeat. Too bad the current guy in charge has a hate on for her. That's one reason I hope Hideo Kojima is shaking up his grip on the franchise.
Mixed sentiment there - I'd rather a game starring a Belnades again.

There's no way a remake would be anything less than a flame war of biblical proportions waiting to happen...
Instead I'd rather concentrate on what we have at this generation that rocks: Mass Effect 1&2, Dragon Age Origins, Batman: Arkham Asylum, Modern Warfare 1&2, Fallout 3 (and New Vegas), Oblivion, Halo: Reach, Red Dead Redemption etc. All of these have legions of fans (myself icluded for the most part) and all are the epic games of their time.
If you are going to update a game, don't remake it. Do a new X-Com (no, not an FPS), a new Planescape: Torment game, a new Master of Orion installment. Don't try to catch lightning twice, you'll just get burned.

As to simple controls... *I* could manage the dogfights in these (true my tactic was normally shunting power from weapons into shields and driving my A-wing through Tie fighters but it was fun...)

I can definitely see what you're saying. Most games I'd like to see "remade" are games where I wouldn't want the content altered, but simply that today's technology and complexities of AI programming could make what was good even better (which is why a lot of games I picked are from the mid 80s).
But I also agree that there shouldn't be messing with perfection (while I love Planescape: Torment, I don't want to see it remade. Sure it would be nice to see it with higher res, polished graphics and a slightly less clunky interface, but that's not worth it when really very little would fundamentally change--especially when there's mods that address some of those issues to a degree--it would be more of a re-issuing than a remake. I hate FFVII, but I doubt I would like it any more with a remake).

God, but I miss the X-Wing series of games. I have yet to play Alliance, I think it's on GOG, but I need a flight-esque joystick to be able to truly enjoy it, and I don't think I can do that with my netbook. I can do a Death Star run in Alliance, yes? And I can fly whatever I want? Cuz Y-Wings forever, other craft never(although I must admit there were probably some technical glitches with how potent the defensive abilities of the Y-Wings were).

Oh, man... new versions of the gold box games would be something... except they would have a serious need to update the story as well. Let me just exemplify: Secret of the Silver Blades. One hugely long corridor, without alternate routes, where you are attacked every 3-6 steps. It's really dizzying how we could stand to play that. Oh well, some are better, and with a good author hooked to the project, they could work wonders with it.
Planescape: Torment. I'll sic the sacrilege police on anyone who suggests an updated version. Same with Dungeon Master, Baldur's Gate, X-Com, Final Fantasy VII.

Interesting, my default tactic was to drop shields altogether for maximum speed and decent rate of fire. Y-wing = too slow. A-wing = not enough firepower. X-Wing for the win!
That being said, my dream would be a Star-Control flight simulator à la X-Wing series. Not sure how it would turn out, as many of the ships' abilities were designed for a 2-D environment.
Also, I'd really would like to see a good flight simulator/first person shooter crossover. A few games like Wing Commander or Tachyon would suit the genre rather well. And well, you know, Bruce Campbell is just as bad-ass with a shotgun...

I want to see a Privateer type game updated. I thought Freelancer was decent, but not enough to do outside your ship. I couldn't finish Privateer, I had killed so many pirates they wouldn't team up with me even for a few minutes.

Y-Wing Pilot 4 LIFE(and no, I don't mean the 5 seconds of life before TIE fighters open fire on me). I don't know what people are doing wrong here- I have no problem taking out TIEs in my Y-Wing, although I will fully admit the AI doesn't seem to "know" how to pilot a Y-Wing.

If Lucas lives long enough to redo the original series I'm hoping he'll redesign the rebellion's starfighters so they'll be a little more kick ass ya knows! I wouldn't mind the Y-Wing, B-Wing, or X-Wing having a auto-turret on them!
Of course I'm also hoping he'll redesign Leia's slave leia outfit to include a belt with several thick, short, and wide ostrich feather boas dangling below her waist AND include a scene where Leia's forced to dance for Jabba...but as they say in France, priorities. ^_~

Planescape: Torment? Bah! What an awful game! I was hoping to create a party of planetouched heroes, and we'd have adventures, save damsels in distress, kill baatezu, tanar'ri and yugloths, and ultimately slay the evil threat to existence itself and save the Multiverse! What do I get instead? A Bob Marley amnesiac and a floating skull who takes every moment of his waking life to insult me! Screw that shit!

Another person who would love to see Baldur's Gate 1 and 2 redone with a modern engine and graphics. BG2 I honestly wouldn't change anything (except maybe less restrictive romance options, or at least a romance option for female chars that isn't a whiny douche). BG1 I might make a little less randomly exploring everywhere and a little more story-focused, or make the random exploring pay off a little better in terms of more frequent, in-depth NPC encounters or scenarios.
I would add the Myst series to this list but really I don't want it remade so much as for it to run properly on modern computers. I've tried several machines and there are always fatal glitches.

The majority of the original EA Origins tag lineup: Updated graphics, scalable resolutions, etc., but all original content.
Wing Commander, Strike Commander, Syndicate (not as a FPS!), Crusader, the whole Ultima collection ...
I loved Origin, and with a tagline "We create worlds", how could you not?

I especially objected to the "bug" where you as a female character, in order to access an area that you must reach to complete certain quests and gain others, are forced to either sleep with a skeevy NPC, steal from the skeevy NPC (which will fail unless you explicitly built for stealth), or kill the skeevy NPC. And if you kill the skeevy NPC, even if in self defense (the closest you can get to talking him into it is provoking him via dialogue to attack you--and i'm sure of this, my speech ability could not have been higher), your alignment significantly drops toward evil. I don't mind the existence of the skeevy NPC and what he demanded; I do mind being told defending myself from a rapist is evil.
I've found that--if I play a female character with a high enough Strength/Charisma score--I can intimidate that guy into giving me the Invitation to the Wellington Men's Club. I'll post back with particulars should I discover what the prerequisite is for that option! :)

It's good to know there is peaceful a way around it--although it's not Charisma because my character had Charisma and Speech out the wazoo--and I had in fact a perk that dumped Strength to boost Charisma, so how you're supposed to do this must require a very specific build. And it still doesn't change the fact that the game calls you evil for defending your character from being raped and killed. The alignment hit is significant--my character was a freaking saint who after this event was being treated dramatically differently, as if she were genocidal, after this one event. Also, IIRC (bearing in mind it's been a very long time since I played the game), the dialogue option that provokes him into attacking you is not an obvious provocation to a fight, and the dialogue indicates the NPC's intentions clearly that he's going to "take" you. If it was a bug it was a hideous one that should have been patched, and it's highly irresponsible that it wasn't.

Sid Meier's Pirates with much better ship combat more like in Empire Total War, not so cartoon like animations and the ability to play a female pirate. lets face it the most successful one was a female (some Chinease lady), and two of the most famous where Anne Bonnie and Mary Reed as well as Grace O'Malley.

I still have MW4 and the Black Knight expansion on my desk. Still umplayed after all these years. After seeing the inferior MW3 (compared to 2), I gave up on the series. I bought MW4 on the off chance I may play it one day if I was bored but never got around to it.
The upcoming MW reboot game supposedly had legal issues iirc. Was it cancelled outright or delayed until the legalities get sorted out?

There's a way to blackmail the guy also but I don't remember how.

HOLY $*@! ME TOO!!! I was just thinking about that game the other day.
Also, did I mention Thunderscape earlier? Entirely different kind of game--think of the original Might and Magic RPGs, but steampunk. Thunderscape definitely deserves a second shot.
DM Wellard: You know you don't have to be online to play Steam games, right? Once you've downloaded and installed the game, you can switch to "play offline" and that way you don't have to worry about Internet crap running in the background while you play. The "downside" is it won't track your hours and achievements properly (any achievements I earned while playing Fallout New Vegas offline didn't get tracked), but I don't consider that a big deal, personally.
Or am I misunderstanding the problem?

I think there was an issue of how the reseen Warhammer in motion looked too much like the Tomahawk for Harmony Gold or Topps to be comfortable. Not sure though. (annoyingly Topps just pulled all the non-macross unseen for reasons unknown)
Feh fill it with Topps designs and I'd be happy. (especially for the Dark Age Spider and Wolverine II)

Dark Age of Camelot.
I know the game is still running online, but it got old and it is time for a DAoC II.
It was my absolute favorite game of all time, and I didn't even play in RvR.
The atmosphere, the cultural identity of each realm, this was incredible.
I never played a game, RPG or MMORPG, with so much immersion and roleplaying.
Mythic should stop wasting their time with Warhammer and bring us back Dark Age of Camelot...
I want more. I want to get back to Hibernia and Midgard (Albion not so much).

Master of Magic screams out for an update
Master of Orion does too (MoO 3 failed on numerous levels including actually being playable)
an RPG in the style of Ultima 4 - you get rewarded for doing good deeds and in fact must become the 'avatar' of said good deeds in order to finish the game.
X-Com or really any turn based squad level tactics game (Jagged Alliance maybe?).
If any of these are a first person shooter I will personally spit on those responsible.

A non-buggy version of Temple of Elemental Evil. Or a Pathfinder version using the same turn-based engine would be fine. Another turn based version of The Bard's Tale (I know of the newer one and enjoyed that too, but something about seeing your "hunter" critically hit that 10th Mangar guard in a row was sweet.)
I'd also love to see an update of Archon, the old combat chess game. That was a lot of fun...

The "downside" is it won't track your hours and achievements properly (any achievements I earned while playing Fallout New Vegas offline didn't get tracked), but I don't consider that a big deal, personally.

I'm not sure I completely undestand either..I switch to offline mode and I get no appreciable improvement in game speed.Meanwhile the stuff that isn't Steam connected runs perfectly smoothly so it's not the PC at fault. I'll admit that I'm not technically savvy enough to figure this out.

Once you've downloaded and installed the game, you can switch to "play offline" and that way you don't have to worry about Internet crap running in the background while you play. Two more possible improvements:
1) Deactivate the Steam Community for the game2) Create a Desktop Shortcut for the game and launch it via the Shortcut, so the Steam library screen doesn't need to be loades.
Also, defragmentating the harddrive seems somehow to be much more important for steam games then for others.

It's good to know there is peaceful a way around it--although it's not Charisma because my character had Charisma and Speech out the wazoo--and I had in fact a perk that dumped Strength to boost Charisma, so how you're supposed to do this must require a very specific build. And it still doesn't change the fact that the game calls you evil for defending your character from being raped and killed. The alignment hit is significant--my character was a freaking saint who after this event was being treated dramatically differently, as if she were genocidal, after this one event. Also, IIRC (bearing in mind it's been a very long time since I played the game), the dialogue option that provokes him into attacking you is not an obvious provocation to a fight, and the dialogue indicates the NPC's intentions clearly that he's going to "take" you. If it was a bug it was a hideous one that should have been patched, and it's highly irresponsible that it wasn't.
Okay, I just got to the section in Arcanum where you can convince Mr. Wellington to hand over the Invitation to the Wellington Club (instead of subjecting one's self to his depredations or killing him). In my current build, my Strength is 14, my Charisma is 12, and my Persuasion is 1; I have a feeling that being female and having a Strength of at least 14 does the trick. A dialogue option to "let him live without tearing out his throat" appears, and--if you select it--he hands the invitation over.
Other possible mitigating factors: my "morality" is at +87, and I have a 3 in Melee and Dodge, Expert-level in those, and Apprentice-level in Persuasion. Hope this helps! :)
P.S.: I'm also using Drog Blacktooth's unofficial patch; I don't know if that matters.

I'd love to see Master of Orion (2) brought to mobile devices. Many of those old turn based strategy games scream to make their way to touch driven portable platforms. MoO 2s interface is almost ideal for touch (and was almost horrible for mouse).

Lucas Arts needs to get on a new Flight Sim. They actually have a wide range of options. Personally I'd like to see it set in the Expanded Universe's Second Galactic Civil War. The backdrop provides a wide range of basically brawls across the galaxy with a wide range of ships. I do miss X-Wing/Tie Fighter
I also really wanted to see a Star Wars Battlefront 3. I know the studio that made it isn't around anymore but I liked how it got expanded between SWBF 1 & 2. A new game with a similar class system/feel on a new rendering engine with environmental improvements and other modern advances would be totally awesome.

Firaxis - the makers of CIVILIZATION - have listened to your pleas (well, not yours specifically, but the harsh outcry from the Internet in general) and will be releasing a modern update of XCOM: ENEMY UNKNOWN in 2012. It's still turn-based, it has base-building, it has the Geoscape screen, it has R&D. It pretty much has everything from the original (er, although the action point system has been simplified and you can only take 4 men on missions).
The FPS has also been pushed back to 2013 for reasons unknown.
