Well in order to mount your typical druid you're going to need bait. This can be tricky since they have such widely devergent tastes. Some might actually like "natural" smelling perfumes, musky scents or flowery ones might serve you well to attract their attention. Now you shouldn't try to out "wild" a druid -- this will generally end poorly for you, however a firm appreciation of the natural world can easily help you get a little closer to seeing the druid "al natural" so to speak...

Seriously, 'though, the horse isn't the one who has to buy the Mounted Combat, Ride-by-Attack, Mounted Archery, etc. feats, it's the rider. The 'mount' doesn't even really need specialized training, per the wording of the feats. Any old mount will do. As written, if the rider has the feats, the Druid should be able to perform the tricks.

Get an ape companion, use its first stat increase to up the int to 3, put all its ranks in ride, have it take mounted combat, ride-by attack, spirited charge, weapon prof. in lance, and maybe some armor prof. and poof, insta non-standard cavalier. plus enemies will probably think you're the ape, not the mount, which leads to some fun surprises

That depends on the mount. For instance, a griffon is an intelligent creature, but it still needs to be trained before it can act as a mount. Likewise, pegasus need training too (otherwise the sentence "Trained pegasi are not afraid of combat" doesn't make much sense).
My two bits: I'd say that a druid wild shaped into an animal makes an "ill suited" mount unless a certain amount of time and money is spent in training (something along the lines of what a griffon or pegasus would need).
