I have an Alchemist Bomber in a Remaster rules campaign. I've read the new rules, and the Requirements stated on page 59 only says "You’re either holding or wearing an alchemist’s toolkit and you have a free hand".
Reading the Quick Alchemy feat, it seems like it's usage is dependent on versatile vial availability.
but then the Quick Vial option within the feat says: "You create a versatile vial that can be used only as a bomb or for the versatile vial option from your research field".
Help... just a bit confused.

I took me awhile to wrap my head around this.
There are the Daily powers (Advanced Alchemy)
There are Encounter powers (Versatile Vials)
There are At-Will powers (Also called Versatile Vials)
The Encounter powers are when you use Quick Alchemy:Create Consumable to turn your Versatile Vials (2+Int pool, regenerating) into Consumables.
The At-Will powers are when you use Quick Alchemy:Quick Vial to create a Quick Vial that's only usable as the base versatile bomb or your Research Field Specialty.
It's as though instead of using a word like cantrips, they decided to also call them Focus Spells, but have them generate their own Focus point right before casting.

to pu it simply:
Quick Alchemy can do 2 things:
a)use one of your Versatile Vials to turn it into something you have the recipe of.
b)create a Quick Vial.
Quick Vials are "like" Versatile Vials but CANNOT be used to turn them into something else. You can only use them as the base Versatile Vial bomb or the path specific Versatile Vial abilities.

Basically, either use one of your normal Versatile Vials to turn it into something else, or spend an action to create a temporary bomb/specific path thingy. The latter being basically your "cantrip" power.

Not disagreeing with the other responses. I think they are right.
Adding that the requirements for using an action are different than the costs of using the action. So as requirements, you need to have a free hand and wearing alchemist's tools, or holding the alchemist's tools in order to use Quick Alchemy. But that isn't accounting for any costs of what you are trying to do with Quick Alchemy - at least partly because that cost varies depending on what you are doing.
And yes, the name collision of 'Versatile Vial' is a bit annoying. It would be better to use Quick Vial in the description of Quick Alchemy:
You can either use up a versatile vial to make another alchemical consumable at a moment's notice or create an especially short-lived Quick Vial.

Quick Vial allows you to create a versatile vial which you can use as a Base Acid Bomb (hmm. Funny) or 'for the versatile vial option from your research field'. What does that mean?
Are they talking about the Field Vial Option or do they mean the Formulas that you get with your Research Field? Or something else?
If it is the Field Vial option that's really useful for Chirurgeons who can basically heal everyone back to full between encounters basically for free (it doesn't gain the Consumable trait, and only gains the Elixir trait if you drink it). If it means the Formulas you get, that is a whole other can of worms...
Or am I, as usual, missing something?

It's the Field Vial options of each field.
Keep in mind for Chirurgeon it gains the Coagulant Trait which makes you immune to further healing from the Versatile Vial for 10 mins.
Basically it's 1 free (minor) heal per person per 10 mins.
