Can I use the prehensile tail to reload while my two hands are full? Or can I change the barrel of a capacity weapon with that? Asking this since it says both that I can use it for Interact actions and that I can't use it for actions requiring fingers or significant (what's significant f.e.). I am trying to build a dual weapon bullet dancer after the GnG errata without having to use pea shooters (air repeaters) because it ruins my immersion but it seems to be an impossible feat without the gunslinger archetype as well to get the buffed dual weapon reload.

The answer is 'ask you DM', as only they can tell you is those actions "require fingers or significant manual dexterity".

Personally I think that any other reload trick feat should get similar treatment. It is clearly what the developers have in mind for the game as a whole even if they haven't gone through and changed every last word for all of the content.
So, for example, Dual-Weapon Reload from Dual-Weapon Warrior Archetype should work the same as Dual-Weapon Reload from Gunslinger.
Bullet Dancer does also have Bullet Dancer Reload, but it is level 12 and requires a prerequisite feat, and it is noticeably worse than Dual-Weapon Reload. But it is available.

The errata moved Bullet Dancer Reload to level 10, for what that's worth. But since it has the Flourish trait, you can't use it in the same turn you flurry, which kind of defeats the purpose.
I've been running a 2-weapon Bullet Dancer in PFS (so, no Free Archtype). It is rough. In most fights you will only ever get off 1 double pistol flurry, most of the time a flurry will be a gunshot and a melee strike with its attached weapon.
Swap made a huge difference in its viability, though -- it's now possible to flurry every round and get a second gunshot flurry on turn 4, which means it might actually happen.
