You are unlikely to find all that much by the rules because PF2 is specifically designed to not give you that kind of advantage (or disadvantage) based on which ancestry you chose.
The only real thing that you have going for you that you're going to get much out of is void healing, and the associated immunity to void damage.
- Oil of Unlife is apparently the undead equivalent of a healing potion.
- If you have an alchemist buddy, then they can throw necrotic bombs all day long and not worry about catching you in the splash damage. Of course, backfire mantles also exist, but it can be nice for early levels
- Similarly, if one of your allies has a Mask of the Banshee, that's now party-friendly (for you)
- Incense of Distilled Death might actually be kind of cool for you. It creates a temporary zone of fast healing for undead.
There are also a few things from various APs, but they're all pretty janky.

Pretty much what Sanityfaerie said
the best thing you could do is coordination with your team - they are free to call down void damage upon you and whoever is so unlucky that they get grappled
void clerics with (directed) harm will be great allies
but generally there is little equipment, especially equipment that would require you to be undead
